Check the Fruit & Orchards forum, as they may have more info about your trees. Maybe it needs special care, such as fertilizer, soil amendment, etc. Also, it's possible that your trees will make good apples only on alternate years. I know that my fig trees produced more on alternating years. Or maybe you need to remove excess fruit to allow the remaining fruit to get larger. I've seen them do that on Japanese TV.

As for the small green apples - I would put them into compost, if I had a compost pile, and so I put things like that in the green recycling bin. Were you able to find out what variety the trees are?

Where are you located? i know here in the PNW, most apples are still little, hard and green. Some of them won't mature for months yet, so unless you are thinning them, or they are falling, I'd wait and see what you have.

Chutney? You could can a few small jars by hot water bath processing. Dried cranberries, raisins, etc. could be added, even some green tomatoes if you could get them.

Are some falling or just so many that you are curious?
Old trees are often called 'wild'. Seed grown years ago for ciders, juice, and baking.
Even used as water when in a drought or wells dried up...or a water source became contaminated.
I have some oldies and have small tart fruit. Small, having never been pruned for years. (If ever). Overgrown. They will sweeten a bit come fall but usually still on the tart side and not great as a fresh eater. Depending how ambitious you are, many things can be made from them. Cider, vinegars, baked, prepped and frozen or canned, etc.
My farm was established around 1813-15 by town records, so fruit trees were most likely planted following the clearing of the fields...
Might be good to try and determine the age of your trees. A pic of the whole tree and a close-up of a fruit cluster and your location. Some, if not too old, can be pruned and the fruit culled over a few years to give new life and tasty large fruit.
(I've put in grafted trees over the past 20 yrs for fresh fruit.)
Googling different key words like 'wild apple tree recipes' might help.

As mentioned, the fruit and orchard forum on here can help determine the age of your trees. Some might say 'good for firewood', 'good for nuttin'.... i tend to ignore those comments.

There are also trees that grow little green apples because they're little green apple trees. Though maybe that's the same as "wild apples". We sometimes get little green apples in the grocery store. They're like crabapples, but not as sour.

When I was a kid, there was a little green apple tree in the pasture where we were supposed to be learning horseback tricks. Instead, we learned how to stand on our saddles to pick apples to eat. :)

Since your apples aren't ripe and you don't know what they are, it's hard to say what to do with them. Processing a bunch of little green apples would have to be worth the effort. Grinding and pressing them for cider, and thence to vinegar, might be worth it, but it's still a lot of work.

Then...there is the little green apple game. Fun for young and old if YARD SPACE IS SPACIOUS and remote from nearby neighbors.

With pruning shears cut a long upright growing length of 'whip' from an apple tree branch. Prune back the tip a bit and impale a green apple on the end. Now, wind up with your best baseball pitching form and send the apple sailing into the blue. Kids like to set up targets to hit. Lots of adult fun at outdoor cookouts.
