These are excellent.... just try to concentrate on the red wine benefits out weighing the nitrates, etc! LOLOL!

Cocktail Weenies w/ Wine Glaze

Ingredients

1 package cocktail weenies
1 package of bacon
1 bottle of Wine
1 tablespoon butter
3 tablespoons sugar Brown sugar for seasoning
Instructions

Heat oven to 350 and cut the package of bacon in half. Then wrap each weenie in a piece of bacon. Add sugar and butter to a few cups of wine and begin to reduce down until it becomes a glaze. Then apply to weenies wrapped in bacon. Add brown sugar on top of the bacon and slide in the oven. Bake until bacon begins to get crisp (approx. 25-30 min).

Thanks for the great link. As far as bad wine goes, I would serve it late in the night, after the good stuff is gone. By that time, none of my friends would notice the decline in quality.

I toss dry red wine in large amounts into my chili as well as the usual spices and a tablespoon of unsweetened cocoa.

Coincidentally, I just made this marinade about 15 minutes ago and plopped a hunk of top round in it.

SIRLOIN ON A STICK

Marinade:
1/2 cup soy sauce
1/2 cup dry red wine
1 Tbs. minced fresh ginger
1 Tbs. minced garlic
2 Tbs. chopped cilantro or fresh parsley
Freshly ground black pepper to taste

1 and 1/2 lbs. beef sirloin, cut into 12 pieces, about 2 inches square

Mix marinade ingredients in a deep bowl. Add sirloin pieces; toss to coat. Cover and refrigerate overnight until use.

Preheat broiler. Remove beef from marinade and thread three pieces each onto four skewers on the diagonal.

Place meat 4 inches from heat. Broil 3 to 4 minutes on each side, brushing with marinade and turning once for medium-rare meat.

Can also be cooked on a grill. Serves 4

I put stuff like that in the pasta sauce (tomato based, of course). Chili would work, too

Confessions of a white wine drinker: I'm a heathen. I will stir a tiny bit of sugar into a glass of red wine I find just too dry or tannic for me.

If I happen to get one I really don't care for I save it for cooking, too.

But I am more impressed with the video! Whodathunk???

From a friend who is a wine maven: "this method would not be a good idea, if for any other reason, shaking a bottle is not advised because it would suspend any sediment, rather than having it settled to the bottom where it can be decanted away. older wines in particular are very sensitive to lots of motion."

Somehow I think your bottle is exempt.

I've seen it done.

While traveling somewhere in Mexico, we bought a bottle of wine. We had no corkscrew and, for some reason, the store did not sell them. We explained our predicament to the store owner and he opened the bottle using that method. He didn't use a shoe, though. He cushioned the bottom of the bottle by wrapping it with a towel, then slammed it against the wall. I don't think the quality of that particular bottle was impaired.

Have you tried using a balloon glass? I've had red wine taste entirely different depending on the shape of the glass. Also, it might taste better with a different food.... I've experienced this too. Otherwise, I'd use it to cook with as long as it isn't vinegary.

Hmmm... can always get drunk on better wine first.

Offer it to a teenager in exchange for mowing the lawn?

Gift it to someone you are not really in love with.

We ate a dish called Spaghetti All'Ubriaco (drunken pasta) at Osteria di Benci, a restaurant in Florence, and loved it. We thought it might be a good use for old red wine, and can't wait to try it ourselves. Unfortunately I forgot to take pictures at dinner that night. But, I googled and found this link with a description and picture of the dish. We loved it.

I use so-so wines in gravy (red sauce)...but no matter how many glasses of wine I have I still can spot the crappy one as the evening progresses...Must stop drinking that much wine LOL!!!

Thanks for the suggestions! I clipped both recipes, debated about the Sangria, but for now it just went into the freezer. Unfortunately I still have a couple more bottles in my wine fridge so I can try these ideas.

(They came from someone who had cases of it left over after a failed business venture of importing wine. He blamed the failure on Italians being very difficult to work with. But I tend to think the wine that he was trying to import may have had something to do with the failure!)
