Just bought a convection oven.

Because of this problem with rising prices of natural resources i went out and purchased a convection toaster oven. Its big enough to fit a store bought frozen pizza in there so for one person its great. It cooks in less time than a traditional oven. The best part about it is that it electric so no gas is used at all. I recommend them to anybody trying to cut down on their gas use during these times when you might want to conserve on gas and oil.

I've had a Sharp Carousel Microwave/Convection Oven since 2002 and love it because I can bake a panned loaf of bread in 20-minutes and NO preheating (25 minutes for 2 loaves).

For even MORE savings on utilities I use my two Solar Ovens as much as possible.

This is tough because it is going into my 90 year old's mother's house, where she will not be able to understand any bells and whistles, BUT I own the house, and ultimately will be living in it. We probably won't be baking everyday, but I will be retired in a few years, and I'm sure we will use our kitchen more often. I don't need top of the line, but I don't want low end either. I looked at the GE Profile as one of my options with the Advantium 120. People were critical of the Advantium, but I think that may be older models? Well, the Miele with a Masterchef on top would be too cool, but I think that tops $6k. I was probably looking at around $3k, unless you convince me otherwise. ;-)

We sell a lot of these. These issues are uncommon. Have you had service out on this unit? Perhaps there is something wrong with it? If you have and they have not been able to resolve this, you should escalate the matter through your dealer. Thermador is imperfect, but generally are a good company in terms of customer support.

Are speed ovens just convection microwaves?

One of the big changes from 40 years ago is a vast improvement in active convection technology (the kind that uses a fan). I have an Advantium and a combi-steam oven, plus a large oven. I've used all on convection only and they all do a great job as ovens. For baking, I still prefer my big oven in other modes (e.g., bottom heat), but convection only for a small tray of cookies would work fine. Cookies are not something to be done on speed mode, though there might be one with acceptable results. They only take ten minutes anyway. Some speed ovens really are similar to convection microwaves, except that they can do both modes at the same time. Some have additional heating elements, whether it be a broiler, or, in the case of the Advantium, a halogen radiant heat element which is only used for speed cooking. The control brain uses all of the elements together to speed up the cooking. Some are better at it than others. Some have only a few speed settings, whereas others, like mine, allow you to program your own or modify any of the built in programs. There is a significant learning curve, because it really is a different way of cooking, but just leaping in and trying it makes the learning much faster. Try reading through the manuals of the models you're looking at (they're available on the makers' websites). Also try reading their recipes, and others you find posted online, and see if you can get a sense of that kind of cooking and how it fits with your lifestyle. I don't know what "most" people are doing because most of the people who post here are much more serious about food preparation, I think, even when it is a frozen dinner. Over the years, in our speed oven discussions, it's not frozen dinners that get mentioned, though the cult of pizza has its say. People talk about roasted chickens, baked potatoes, and other basic dinner components, often for the family that has a short window of time between home from school/work/sports and going out to civic meetings/church/other sports/social events, but wanting wholesome, freshly cooked food for a proper family dinner. My need for that kind of meal pretty much dried up by the time my kitchen was finished, so I don't do a lot of it, but the Advantium is awesome when I do have a need for speed. It's also great both as a microwave and a convection oven. Owners of other kinds of speed ovens are also pleased with theirs. Search some of the old threads for more on that.

Replace Microwave/toaster oven with speed oven/convection microwave?

So, make a niche(s) with the proper electric service and size to have a built-in put in if you really need it to sell (but I bet you won't)--if you're planning to sell within three years, get the built-ins already, but otherwise, they're going to be just so many used appliances. If yours are truly ratty, you can buy new versions of each. If you WANT a speed oven, and intend to use it as such, that's another story. Go for it! Read through the manuals, etc. But I think you'll find that it's not at all the same thing as your Breville toaster oven. You can use the convection oven settings on a speed oven to perform some of the same functions, but it's a real oven, with limitations, not a toaster that tap dances. I sometimes use my speed oven the way others use a toaster oven--mainly for heating up frozen appetizers or reheating casseroles when other ovens are full, but my old (dead) toaster oven was beloved for making great toast, which a speed oven isn't, and not for other uses. I do zap sandwiches on MW mode, and once in awhile lightly defrost or melt, but if I used a microwave more, I wouldn't have such an expensive machine doing it. I agree with putting enough thought into a remodel that it won't limit resale, because you never know what the future will bring--thus make sure there's place for built-ins to be built into--but unless it's a flip, it should be designed for your own use and enjoyment, and you used the key words "heavily use" and "love".

eandhl-

Call the company and see if you can get another copy of the Cookbook that came with your oven. It has all kinds of recipes in it. Once you've used a recipe in the book, you can quickly translate it to one of your regular recipes, or use the recipes in the book as a guide-line for adjusting your regular recipes.

Panned Bread: Place the panned bread on the low rack which is sitting on the Carousel Turntable (the turntable is also a utensil itself). Low-Mix / 325°F / 20-25 minutes for one loaf (1 to 1.5 pound loaves), 25-30 minutes for 2 loaves. NO preheating.

You can place shaped breads (a braided bread or round "country" loaf) on the turntable (with or without a piece of parchment paper) and allow it to rise on the turntable. No preheating is needed to bake it. Bake for three-fourths of the time in your conventional recipe on LOW MIX (I usually reduce the temperature by 25°F).

Cookies: On the low rack (which sits on the carousel turntable) for one pan, or for two pans, place one pan of cookies on the carousel turntable, and another pan on the tall rack (which is perched on the turntable). Make sure the turntable is ON. For cookie sheets, I cover 12-inch round pizza pans with parchment paper. Make the dough balls about 3/4-inch big (or smaller), placed 2-inches apart. Preheat the oven / Bake 12-minutes at 350° / Convection Setting. I've found it takes less time to bake cookies after the first trays are done, so watch them carefully.

Baked Goods: Use the Low Mix setting for baked goods that require more than 20 minutes baking time. - Angel food and bundt cakes, quick breads and yeast breads and large muffins are examples of foods that work on this setting.

Convection: Ideal for foods requiring 20 minutes or less cooking time. Preheating is necessary with convection cooking. You can use two 6-cup muffin tins at the same time, place one on the carousel tray, place the other on the high rack. Make sure the turntable is ON.

A rectangular cake pan, large cookie sheet or 12-cup muffin pan are ideal for convection baking on the low rack with the turntable OFF.

I reduce the temperature by 25° and baking time to 25-50% from the typical oven temperature and time for the recipe.

I usually check things at 50% of the normal baking time and adjust from there. I make notes on my recipes for baking in the Sharp.

Hope that gives you some new ideas...

Thank you grainlady. You have given me some ideas and I will call to see if I can replace the book. I still haven't located a lot of stuff with our move.

I love my regular little T.O. and had the same thought of my next one being convection too - although I still don't want a big one? A whole pizza - that must take up a lot of counter real estate?

It takes up about the same amount of space as a microwave. I have a microwave and a convection. I found space for both but if you want to conserve space you can get a two in one.

When my micro bit the big one I went after a micro/convection but wound up with a convection toaster oven. I love it, chicken nuggets in 30% less time :)

Just bought a convection oven.
