Nix regular oven for Steam/convection and Microwave/Convection?

Comments (8)I've had a Gagg combi for about 18 months and absolutely love it. I had a Gagg convection oven in my old house which is what got me to look at this, since I loved the way that cooked. This one has the added benefit of being able to add moisture to roasting or baking, so it isn't an either/or set up. I often cook a quick dinner with only the combi steam, and don't even use the burners on my range. I've written about this before, but to sum up, you control both the moisture level - 0%, 30%, 60%, 80% and 100% - as well as the temperature. There's a cookbook and a "wheel" which helps teach you what to do. I use the 100% steam setting at 220 degrees for things like veggies, fish, poached chicken breasts and I like that fact that it begins steaming almost immediately. It's wonderful for boiled eggs. I've used it to cook meatloaf or ribs at 400 degrees and 100% steam - you get crispy, browned top but very moist interior. I recently did a braised oxtail dish on my stove top for the first step (since I was browning them) and then, the next day, finished it by slow cooking in the Gagg, I just measured one of my largest baking pans- it measures 17" by 12" and fits into the oven - it's tight by it glides in and there's enough room for air to circulate (because of the rack supports on the sides). I think that because it's a smaller size it's more energy efficient in terms of heating up and coming up to steam and maintaining the moisture level. But, I have no proof - just my gut feeling. I like reheating things in the Gagg much better than in an microwave - especially things like beef or chicken - they taste fresh cooked. I've done mundane things, like reheat pizza - 375 with 30% moisture - or refresh a stale baguette. I've roasted chicken - haven't done a turkey but based on the size of my roaster, I bet a turkey up to 15 pounds would fit. What do I use my microwave for? Reheating my coffee, popcorn, warming maple syrup. Not much else. I could probably do everything but the popcorn in the Gagg- maybe I'll experiment! LOL. In short, I use it instead of my stovetop, I use it for baking (pie crusts are great), I use it for roasting (with moisture to keep the meat moist and tender.) I've been surprised by the versatility and how often I turn to the Gagg instead of my range/burners/ovens/microwave. Last night, I roasted some cauliflower which comes out nutty and caramelized. I love to do meat - ham & cheese, sliced chicken & monterey jack, etc. - on an egg twist roll and bake it at 400 with 30% moisture. Yummy! Comments (1)I'm not a huge proponent of having a MW (though I do have one and use it), but the way it cooks - causing water molecules within food to heat and thereby transfer heat to the food is unique. All other means of baking rely on heat penetrating from the outside, so while some methods may speed up this process relative to conventional baking, none can exactly replace the speed that a MW heats food. If you rely on a MW to reheat frozen prepared food, whether home-made or purchased, I doubt the other types of oven technologies will be anywhere near as fast. I make up and freeze a lot of food dishes that are reheated in the MW, and I use it to cook frozen, and some fresh, vegetables very quickly. Comments (5)It's possible that the convection microwave would do it, especially if it's a built-in, 240V, but if your current toaster oven is as perfect for your current needs as it sounds, I'd keep it so long as it's functional. I have some doubts about the 120V convection MWs--I've only used them at others' houses but they seem inadequate. You can decide after you have the new kitchen if you prefer another appliance for your toaster oven uses. I'd guess that the smaller range oven would be a better toaster oven alternative, but I can't guess about heating times, etc. A good range oven should heat evenly. Comments (22)So, make a niche(s) with the proper electric service and size to have a built-in put in if you really need it to sell (but I bet you won't)--if you're planning to sell within three years, get the built-ins already, but otherwise, they're going to be just so many used appliances. If yours are truly ratty, you can buy new versions of each. If you WANT a speed oven, and intend to use it as such, that's another story. Go for it! Read through the manuals, etc. But I think you'll find that it's not at all the same thing as your Breville toaster oven. You can use the convection oven settings on a speed oven to perform some of the same functions, but it's a real oven, with limitations, not a toaster that tap dances. I sometimes use my speed oven the way others use a toaster oven--mainly for heating up frozen appetizers or reheating casseroles when other ovens are full, but my old (dead) toaster oven was beloved for making great toast, which a speed oven isn't, and not for other uses. I do zap sandwiches on MW mode, and once in awhile lightly defrost or melt, but if I used a microwave more, I wouldn't have such an expensive machine doing it. I agree with putting enough thought into a remodel that it won't limit resale, because you never know what the future will bring--thus make sure there's place for built-ins to be built into--but unless it's a flip, it should be designed for your own use and enjoyment, and you used the key words "heavily use" and "love"....See Moremalba2366
