Yeast Amounts in Bread ?

I need some help figuring out yeast amounts for bread. IâÂÂve been making lower sodium bread for about three years now, ever since my husband was diagnosed with CHF. Thanks to all the good information on this forum, IâÂÂve had no problems getting the amount of yeast correct. I learned that when I lessen the salt amount, I need to also lessen the yeast amount proportionally. I usually just use half the amount of salt in regular bread recipes.

Now IâÂÂd like to experiment with no sodium bread, but I donâÂÂt want to waste a bunch of ingredients. One of the famous low salt websites has a bunch of salt-free bread recipes, but IâÂÂm kind of leery of them. The author uses just about the same amount of yeast required for full-salt bread recipes with no adjustment for total lack of salt. HereâÂÂs an example of one of his recipes:

Rosemary Baguettes

1 cup warmed water

1 tablespoon cider vinegar

1 ý tablespoons extra virgin olive oil

ý teaspoon vanilla extract

3 cups less two-tablespoons best for bread white flour

2 tablespoons potato flour

1 level tablespoon vital wheat gluten

1/4 teaspoon ascorbic acid

2 level teaspoons sugar

1/2 teaspoon onion powder

1 tablespoon dried rosemary

2 1/2 teaspoons bread machine yeast

My real questions are these: If I want to use no salt whatsoever in a standard 3 ý cup to 4 cup flour recipe, how much yeast should I use? Only 1 teaspoon? 1 ý teaspoons? Are there any other ingredients I could use that help control yeast like salt does?

Any thoughts or suggestions are appreciated.
