Dough 2tablespoons extra-virgin olive oil 1cup water (8 ounces), room temperature 2cups bread flour (11 ounces), plus more for work surface 1tablespoon whole wheat flour (optional) 2teaspoons sugar 1 1/4teaspoons table salt 1teaspoon instant yeast Topping Coarse salt Plain olive oil Optional Topping Choices 2ounces Parmesan cheese , finely grated (about 1 cup) 1/2cup coarsely chopped herbs , such as thyme, parsley, basil, marjoram, and oregano 3tablespoons sesame seeds mixed with 1 tablespoon chopped fresh thyme leaves; sprinkle lightly with lemon juice before serving 1/2cup chopped fresh oregano leaves and 6 ounces crumbled feta 2tablespoons minced anchovy , mixed with 6 tablespoons chopped black or green olives 1/2cup basil pesto or tapenade 4cloves garlic , minced or pressed through a garlic press (about 4 teaspoons) 1/2teaspoon red pepper flakes 1/3cup extra-virgin olive oil 1. FOR THE CRUST: Combine oil and water in liquid measuring cup. In food processor fitted with plastic dough blade or metal blade, process bread flour, whole wheat flour, sugar, salt, and yeast until combined, about 5 seconds. With machine running, slowly add liquid through feed tube; continue to process until dough forms tacky, elastic ball that clears sides of workbowl, about 1 1/2 minutes. If dough ball does not form, add more flour 1 tablespoon at a time and process until dough ball forms. Spray medium bowl lightly with nonstick cooking spray or rub lightly with oil. Transfer dough to bowl and press down to flatten surface; cover tightly with plastic wrap and set in draft-free spot until doubled in volume, 1 1/2 to 2 hours. 2. When dough has doubled, press down gently to deflate; turn dough out onto work surface and divide into 4 equal-sized pieces. With cupped palm, form each piece into smooth, tight ball. Set dough balls on well-floured work surface. Press dough rounds with hand to flatten; cover loosely with plastic wrap and let rest about 15 minutes. 3. Gently stretch dough rounds into disks about 1/2 inch thick and 5 to 6 inches in diameter. Working one piece at a time and keeping the rest covered, roll out each disk to 1/8-inch thickness, 9 to 10 inches in diameter, on well-floured sheet of parchment paper, dusting with additional flour as needed to prevent sticking. (If dough shrinks when rolled out, cover with plastic wrap and let rest until relaxed, 10 to 15 minutes.) Dust surface of rolled dough with flour and set aside. Repeat with remaining dough, stacking sheets of rolled dough on top of each other (with parchment in between) and covering stack with plastic wrap; set aside until grill is ready. 4. TO GRILL: For Charcoal Grill: Ignite 6 quarts (1 large chimney) hardwood charcoal or briquettes in chimney starter and burn until fully ignited, 15 to 20 minutes. Empty coals into grill and spread into even layer over three-quarters of grill, leaving one quadrant free of coals. Position cooking grate over coals and heat until grill is medium-hot, about 5 minutes (you can hold your hand 5 inches above grill grate for 4 seconds); scrape grate clean with grill brush. For Gas Grill: light all burners and turn to high heat, cover grill, and heat grill until hot, about 15 minutes; scrape cooking grate clean with grill brush. 5. Lightly flour pizza peel; invert 1 dough round onto peel, gently stretching it as needed to retain shape (do not stretch dough too thin; thin spots will burn quickly). Peel off and discard parchment; carefully slide round onto hot side of grill. Immediately repeat with another dough round. Cook until tops are covered with bubbles (pierce larger bubbles with paring knife) and bottoms are grill marked and charred in spots, 1 to 2 minutes; while rounds cook, check undersides and slide to cool area of grill if browning too quickly. Transfer crusts to cutting board browned sides up. Repeat with 2 remaining dough rounds. 6. Brush grilled sides of 2 crusts generously with garlic oil; top each evenly with one-quarter of topping, if using. Return flatbreads to grill; cook uncovered until bottoms are well browned and toppings are heated through, 1 to 3 minutes. Transfer flatbreads to cutting board; repeat with remaining 2 crusts. Sprinkle flatbreads with salt to taste; cut into pieces and serve immediately.

I add roasted garlic and cheese to both the french baguette recipe that I use and Italian bread. was made using french bread dough. The were added when the loaf was being shaped for its last rise. You can use either of these recipes in a kitcheaid, but the Italian bread is a very wet dough and you have to watch the machine closely as the dough rises up the hook. You can cut the recipe in half. Pulse to mix. Add 1 1/3 cups of water and process until the dough comes together. If the dough doesn't form a ball, add a little of the extra water. Process for about 60 seconds, turn off machine and let dough rest for 5 minutes. Turn on the machine again and rotate the dough about 30 times under the cover, and then remove it to a lightly floured work surface. it should be fairly smooth and quite firm. Let the dough rest for 2 minutes and then knead roughly and vigourously. The final dough should not stick to your hands as you knead (although it will stick if you pinch and hold a piece); it should be smooth and elastic and, when you hold it up between your hands and stretch it down, it should hold together smoothly. Preliminary rise - 40 to 60 minutes at around 75F. Place the dough into a clean dry bowl, (do not grease the bowl), cover with plastic wrap, and set in a warm place free from drafts. (note the French do not grease the bowl because they believe the dough needs a seat to push up from). This first rise is sufficient when the dough has definitely started to rise and is about 1 1/2 times its original volume. Deflating: Turn the dough onto your lightly floured work surface roughly and firmly pat and push it out into a 14 inch rectangle. Fold one of the long sides over toward the middle, and the other long side over to cover it, making a 3 layer cushion. Repeat the operation. This important step redistributes the yeast throughout the dough, for a strong second rise. Return the dough smooth side up the bowl; cover with plastic wrap and again set to rise. Final rise in the bowl - about 1 to 1 1/2 hours or longer. The bread should be 2 1/2 to 3 times its original bulk. It is the amount of rise that is important here, not the timing. To Shape, Cut the dough in half. Set one piece aside and cover with a towel. On a lightly floured work surface pat the dough into a 14 inch rectangle, squaring it up as evenly as you can. Fold the rectangle of dough in half lengthwise and using the heel of your hand, firmly press the edges together whether they meet. Seat well. Pound the dough flat. Now repeat - patting the dough out again and folding it over and sealing the edges. Pinch the edges well and Rotate the dough so that the sealed edge in on the bottom. Repeat with second piece of dough. Cover with plastic wrap or loosely with a towel and let rise to more than double again at about 75°f. Place stone in oven and Preheat oven to 450°F. Slash three long cuts into the loaves and place on the hot stone. Immediately toss a number of ice cubes on to the bottom on the oven to create steam. Bake until bread is golden and has an interior temp of 200°F. Takes about 30 minutes. Making Dough in a Mixer or by Hand When you are making dough in an electric mixer with a dough hook, proceed in the same general way with the rests indicated, and finish by hand. or mix the dough by hand in a bowl, turn out on a work surface, and start the kneading by lifing it up with a sraper and slapping it down roughly for several minutes until it has body. Let it rest several minutes and then proceed to knead. Home Cookin Chapter: Recipes From Thibeault's Table ============= This recipe is also perfect for both Focaccia and Pizza. Sometimes I make a Biga the night before using 1 1/2 cups of the flour used in this recipe with one cup of water and 1/2 teaspoon yeast. If you don't have time to make the biga then this the recipe works just fine as follows. This is a very wet dough and needs to be mixed in a machine for a long time before you can finish kneading by hand. I use a Magic Mill Machine. If you are using something like a kitchenaide you have to watch it carefully as it climbs up the beater or hook. 8 Cups Bread flour 1 Tablespoon Yeast 1 1/2 Tablespoons Salt about 4 cups of water 2 Tablespoons olive oil. (optional) . Mix flour yeast water and oil( Optional) (not salt) together for a minute and leave for 20 minutes for the water to be partially absorbed. Add salt and mix for about 30 minutes until the dough comes together enough to be worked by hand. Continue kneading until smooth. Place in an large oiled bowl and rub olive oil on top, cover and let rise until more than doubled. Pour out on to surface and divide into the number of loafs you require. Do not punch out the air. Shape into loafs, sprinkle tops with flour and leave to rise on a flour/cornmeal dusted surface. Heat tile/stones in oven to 500 degrees while bread is rising. Slide loafs on to hot stone and spray with cold water, three times, three minutes apart. Lower heat to 450° and bake for about 30 minutes. (I can do two loafs at a time in the oven on a large stone). Focaccia: To make Focaccia use some of the dough and place in a oil rubbed pan (I use a rectangle shaped cake pan) Cover with plastic wrap and let rise. Using you fingers indend the focaccia and drizzle with olive oil. Sprinkle with whatever toppings you prefer. Salt, Rosemary, Sauted or thinly sliced onions, black olives, etc.... Focaccia can be baked directly on heated pizza stone as well. I also use this recipe to make a number of large pizzas. .

Just got the spam...from Sweden. The names were "Lotta" (wife) and "Lars" (husband/researcher). Hmmm...sounds like "lotta liars" to me! Anyway, I am not overweight at all, but do live healthy. The last 13 weeks I was on the "Body for Life" program by EAS...consisting of Myoplex shakes (protein), healthy meals (6 small meals a day), 100+ oz. water a day and exercise. Surprisingly, I lost 10lbs! (went from 112 lbs to 102) I really didn't think I could/needed to lose any weight, but I did. Some people think the 2-3 shakes I had a day was weird, but it provided my body with the nutrients and protein it needed to build/maintain muscle and keep my body from eating the muscle it was trying to build. Before I started this program, I would come in to work and not even eat until 1pm. Some people think that skipping meals will help lose weight...it might not add any extra fat or sugar to your diet, but not eating anything is often worse than eating. Your body will eat away at your muscle and your metabolism will go into starvation mode and hold onto all fat you put into it...thinking it might need it to survive later on. Because of that, I would NOT recommend only eating 3 bananas a day (see some peoples emails above), or 3 of only one anything a day. Perhaps this bread does offer the nutrients your body needs to maintain itself, which is much better than starving it. It would be a great thing to have in the morning rather than skipping breakfast. But I would not make up a diet solely of bread. Also, the person who said "Wheat is very bad for somebody trying to lose weight...even ONE cracker made with wheat can stop weight loss in its tracks" is RIDICULOUS! Maybe if you are sitting on your butt hoping that not eating a few things will be the miracle to help you lose 10 lbs...but in reality, wheat bread, crackers, ect. have more protein, fiber, and nutrients than those without. Your muscles crave protein and nutrients and once you activate and build muscle, you will burn a TON more fat/calories than by just altering your diet a bit. I'm not saying become a musclehead (I am not one at all), I am just saying that wheat is very healthy AND will help you burn fat...lose weight. It's kinda like those people who think if you drink 120 oz. of water in a day you will be retaining a lot of water, but in actuality, if you try this, you will feel much thinner at then end of the day...your shoes won't feel so tight and your wedding ring might even spin around your finger. Try it sometime...ps, the more you do it the less you have to run to the bathroom, your body gets use to it. And finally, why would you think the only recipe that makes sense is the flour, salt & water only one. 2,000 years isn't THAT long ago. Remember the Bible stories and the last supper picture (no, I am NOT a Bible thumper, just making an observation). They had bread back then...and it isn't suprising that they learned to add nuts, dates, raisins, or spices to bread. ...

Eileen: Here's a bread recipe I found that uses baking soda AND baking powder. Haven't made it yet so don't know what it is like, but the reviews for it sounded OK. I got it from epicurious.com, searching under bread. (BTW, most Irish soda breads use baking soda instead of yeast.) If you want a regular-shaped loaf of bread, bake it in a loaf pan. There would probably be a slight change in the baking time so keep a close eye on it. Jane IRISH SODA BREAD - A perennial favorite on both sides of the Atlantic, this raisiny bread makes fine, fragrant toast. 4 cups bread flour 1 tablespoon double-acting baking powder 1 teaspoon salt 3/4 teaspoon baking soda 1 cup raisins or dried currants, rinsed in hot water and patted dry 1 tablespoon caraway seeds 2 cups buttermilk Into a large bowl sift together the flour, the baking powder, the salt, and the baking soda and stir in the raisins and the caraway seeds. Add the buttermilk and stir the mixture until it forms a dough. Turn the dough out onto a well-floured surface and knead it for 1 minute. Halve the dough, with floured hands shape each half into a round loaf, and transfer the loaves to a lightly greased baking sheet. Cut an X 1/4 inch deep across the tops of the loaves with a sharp knife. Bake the loaves in the middle of a preheated 350°F. oven for 45 to 55 minutes, or until a tester comes out clean.
