Favorite pizza topping combos

Hi - here I am again with one of my rare posts soliciting input from the cooking wizards. I usually only post something when I'm on vacation or holiday and have more time to experiment with cooking.

Though it's a somewhat unpleasant, rainy Memorial Day weekend I'm going to attempt to make pizza on my Big Green Egg. I never make pizza (indoors or out) and I'm looking for ideas for interesting, tasty topping combos. We are not big meat pizza fans though we sometimes have chicken or Canadian bacon. It could be entirely veggie and that would be fine with me.

I like fresh sliced tomatoes, fresh basil, a mixture of cheeses (asiago, goat, mozzarella, Parmesan) garlic pan seared shrimp and caramelized onions.
That is my favorite pizza!

I like a simple thin sliced potato, olive oil, s&p, and fresh rosemary pizza. I parcook the potato slices in the microwave before placing them on the pizza. A little fresh minced garlic wouldn't hurt, either.

To please a pizza lover on a low sodium diet I made a faux pork sausage pizza with lean ground pork sauteed with sausage seasonings but no salt. It was a hit.

I also bought "Plant Combinations" from Fine Gardening. I loved it so much, I gave a good friend a copy, too. Jackie: You can prebake the dough in Pans and freeze for later. That's what I did in the Pizzeria. Sicilian Pizza Dough had to be prebaked,Because of it's thickness. Here is a " How To " It sounds like a lot to do but it only takes about 8 minutes to mix in the KA Mixer. An alterative to baking on a stone is to use pans. A 12 inch round pizza will take from 8 to 12 ounces of dough. According to thickness you want. After the dough is made weigh it out and roll into balls. Oil the pans and place a dough ball in the pan and flatten slightly, working the dough towards the side of the pan, with the palms. Then let it rest a few minutes. Repeat this every so often until the dough reaches the side and up, enough for a crust about Â½ inch. Let it raise slightly , pinch the dough all over, with a fork and put into the oven to bake at 400 deg. If it bubbles while baking pinch it with a fork again. When light tan specks show ,take them out onto a rack to cool fast. Then you can use them right away or freeze , to use later. When cooking the Pizza, place the Pre Baked dough back in the oiled pan , Or cook on your Stone. put a latel of sauce on the dough and swish it around, sprinkle some Parmesan or Romano , put it in the oven for a few minutes. Take it out and spread the topping of your choice and the Cheese Topping. A good topping cheese is a mixture of Mozzarella and Provolone chopped and mixed. The provolone gives it a good flavor and doesn't get like rubber when it cools. I use all Provolone. A little trick for baking. Keep a cup of water and brush handy, to baste parts that are cooking too fast Dough recipe: 1 cup of warm water (not hot) 1 Package of rapid rise yeast 1 tablesps sugar ,in a half cup of warm water 1/4 Cup of Veg. Oil 1 teasp.Salt About 3 1/2 cups Flour Â½ cup of Whole wheat flour or up to 1 cup Place in a mixing bowl, the Water, 1 cup of flour, wheat flour , yeast if risen Add the oil and salt and more flour. Add enough flour to make a soft ball of dough, that doesn't stick to your hands. Knead until smooth. Put it back in the bowl , Smooth side up and Rub on some Veg. Oil Cover and set in a warm place to rise until it doubles in bulk. I put it in a warm oven, Covered with a damp towel. It rises in about 1 hour. When doubled, punch it down and knead it well. Divide into Balls , about 11 to 12 ounces and place in oiled pans. 12" round Dough should be about 3/16 " thick on the bottom and about Â½" around the edge. For Sicilian Pizza , I used most of the dough in a 11" X 16" pan Follow the previous instructions. Good luck, Lou

We bought this unit recently and finally got around to installing it in the kitchen a couple of days ago. We tried baking a frozen pizza last night and it did a great job of that. The main downside we have found so far is that the top and sides get very hot during microwaving - the manual specifies 4" of space at the top, sides and back for proper ventilation. I also thought, from the reviews, that the unit could be used for toasting, but can find nothing in the instruction manual about this. Broiling is specifically prohibited. The oven has four preset temperatures only - 350F, 375F, 400F and 425F. I guess the jury is still out on this one as far as we are concerned. It performs well for the money, but doesn't meet all our expectations.

Cori Ann, I don't see if the windows open. They absolutely should. If they don't you will have dangerous heat build up. I don't like the way the shingles go over the windows, poor design. The angled window/roof is wasted space. The upper flap vent shown on one side is too small. An adjustable speed/temperature controlled exhaust fan is mandatory. The air exchange should move from the bottom of the greenhouse to the top. Without opening windows, you're in trouble. Temperature controlled opening windows are best. Otherwise you are a slave to the greenhouse. On the opposite side, it looks like just a too small screen vent. No good. Air circulation and exchange will keep the plants healthy and diseases minimized. The smaller the greenhouse, the more difficult it is to keep an even temperature. Get a greenhouse/shed designed by a good greenhouse company that knows something about greenhouses built specifically for weather conditions in your area. On a veggie pizza I like tomatoes, spinach, artichokes, onions, black olives and mushrooms.

On a meat pizza i like sausage & mushroom or pepperoni and onion.

This alfredo pizza is also good:

Chicken Alfredo Pizza
Adapted from the best of Cooking Light

1 c shredded, cooked chicken breast
1 c fresh spinach, chopped
2 tsp lemon juice
1/2 tsp salt
1/4 tsp black pepper
1 garlic clove, minced
12 inch pizza crust
1/2 c bottled alfredo sauce
3/4 c shredded fontina cheese

Preheat oven to 400F.

Combine chicken, spinach, lemon juice, salt & pepper and toss together.

Spread minced garlic over unbaked pizza crust, top with alfredo sauce, then chicken/spinach mixture, then cheese. Bake 12-15 minutes or until crust is crisp and cheese is golden brown. Cut into 8 wedges and serve.

I like a margherita pizza....
Olive oil, garlic...LOTS of garlic, slices of fresh tomato, basil leaves and at it's purest, shreds of Parmesan...if you are going to be less traditional, add some mozzerella.

I also like sliced tomatoes, rings of green peppers, sweet onion rings and mozzerella....be sure to lio and dress with garlic before you start adding.

Ahh pizza, we love the pizza. I make it frequently. My all time favorite is probably potato pesto, but I also really like sun-dried tomato and arugula pesto. You can see some more on my blog, linked below.

My two favorites are either a round table-style gourmet veg (white sauce with veggies) or pesto with caramelized onions and olives- sounds strange, but I once had it on a Trader Joe's frozen pizza and I've been making it ever since.

Pizza goes great on the grill. But I'm a carnivore that likes lots of cheese and a good tasty tomato sauce. I always figure if I want a salad I'll have it on the side.

Late in posting this, I hope your grilled pizza went well. I used Inas dough and method last weekend and it was great! I did swap a few toppings on a couple of them to please veryone in the house.

We bbq pizza frequently. My favorite combos are:

1.
bbq chicken
bacon
cilantro
gouda
(tomato sauce/bbq sauce base)

2.
thinly sliced steak
mushrooms
roasted red peppers
red onion
blue cheese

3.
thinly sliced cooked potatoes
green onions
bacon
sour cream (seasoned with salt/pepper/chili powder)
drizzle w/ olive oil.
