Qustions about yeast breads

Recently I've been reading a couple of bread cookbooks I checked out from my local library. One cookbook includes a tablespoon of vinegar to every recipe but never says why. Do You know why vinegar is a good addition to yeast bread recipes?

The other book keeps repeating that eggs added to the yeast dough result in dry loaves. I always thought eggs conributed moisture & tenderness. What, then, is the purpose of eggs in yeast dough recipes?

Just want to get my facts straight...
