Yeast Bricks...I mean Breads...

Sub zero temps today so I took advantage and decided to bake. I made Citrus Sweet Rolls, Whole Wheat Bread and Flatbread.

My yeast was fresh and frothed up beautifully, the rolls rose well so I baked them up. Took them out and they are heavy as a brick! Next up to bake was the bread, but it did not rise to anywhere near the volume it should...I chucked the dough.

Flatbread? Yeah....that's anothr story. Tim is 100% Scandinavian and told me of this flatbread his mom used to make. It was dark, round and flat and had a hole in the center of each piece. Unfortunately his dear mother is long gone and no one has the recipe. I found a recipe in a book that looked like it could be what he remembered. I made a batch. Yuck! Flat, and totally tasteless!

So my entire day of baking is in the trash can! What could I be doing wrong? Seems like my yeast breads often have a tendecncy to come out more dense than I would like.

What a waste of a day! I need help!
