Derby Day - Saturday May 1

Since the big race (Kentucky Derby) is rapidly approaching, I guess it is time for me to put together the menu. We are expecting about 40 adults and 798 kids (okay, not that many but it sure seems like hundreds) and the food is always a big part of the celebration. One recipe I am looking for is a T&T Pecan Pie BAR recipe. I've made Kentucky Bourbon Pecan Pie in the past and even though it is delicious, not a lot of people want to have a slice of pie, they would rather pick up a brownie or cookie or something that is 1 or two bites and a one-hand eating effort, but I would like to keep the idea of Pecan Pie in the mix. Of course I will add bourbon to the pecan part and drizzle with chocolate but I am looking for a sugar cookie type crust topped with the pecans & brown karo type thing.

Margarita Shrimp Cocktail

Chips & salsa/dip/Guac

Crab Canoe

Cream Cheese & Hot Pepper Jelly

Fried Ravioli - someone is bringing

Mozzarella/Cherry Tomatoes on a stick

Jambalaya

Hot Dogs & Sliders

Green Salad - someone is bringing

Frito Salad

Brownies - someone is bringing

Cookies - someone is bringing

Cut up Fruit - someone is bringing

Mini Ice Cream Sandwiches

Pecan Pie Bars

And of course Mint Juleps, Beer, Wine, Soda, Sweet Tea, Bottled Water

Is there anything else you can think of that I need to add or change? I am always open to suggestions. And if you have a Pecan Pie Bar recipe I would absolutely appreciate it!
