How to level for wood floor install?

What is the proper way to level a floor for wood T&G flooring installation? (ie furring strip or plywood....)
I have an older home that we plan on installing wood flooring in two adjacent spaces (about 4500sf) The main bearing wall runs between the rooms and has apparently dropped about ¾" over time. Additionally a small section (7Â0 wide) over a crawl space has dropped about 1 ½" over an 8 run. Our current floor is the original ¾ pine subfloor (which we donÂt believe can be salvaged) over 2X6 joists.
We considered jacking the main beam up, however, jacking the main beam would throw all the doors upstairs out of wack.
Any suggestions?
