Mmmmmm...good lookin' breakfasts here! I fixed a Farmer's Breakfast:

a small red potato, nuked, then cubed
onion, diced
deli ham, diced
2 pullet eggs
1/2 slice of deli colby jack cheese

potato and onion were sauteed in oil, ham added, scrambled eggs pour over all, cooked almost set, cheese diced and sprinkled on top - the cast iron skillet was put in the toaster oven set on broil for a couple of minutes to cook the eggs on top and melt the cheese -

With this I had half a homemade multigrain English Muffin, toasted and coffee. It was very good. I thought about taking a pic, but my hunger got the best of me!

I actually made some cinnamon rolls today. Started them last night and let them rise in the fridge overnight. I usually just make pancakes for the boys on Saturday, but this recipe was in the latest Bon Appetit, so I tried them out.

No snow here on the Jersey Shore. We had our usual Saturday breakfast of whole wheat French toast with maple syrup. I'm still increasing the nutmeg each time I make it to see when it's too much.

Yesterday I made my Texas Bean Dip so that I could have Migas today. I used a mixture of Serrano and Jalapeño chilies in the migas so that they would be a bit spicier. Last week-end I made migas just regular beans, but they are so much better when made with my bean dip. I made guacamole this morning to serve with them, using a fresh lime from my tree. Also had a glass of OJ from my orange tree. If I had known about this thread earlier, I would have taken pictures. I'll have to remember to do that next time.

I had 2 soft boiled eggs on buttered toast and an Italian cappuccino. I never was a big breakfast eater unless we were traveling, but I sure could eat some of deborah_ps cookies and a cup of tea right about now. Vique

These pictures look yummy! Nobody seems to like breakfast at our house, though brunch is an occasional thing.

My pictures would be boring - DH had a bowl of Cream of Wheat for breakfast, and I had a bowl of oatmeal and a banana (which is what I eat every morning; okay, I'm a creature of habit).

Those are great breakfasts....especially for cold mornings.

Here I'm still working on getting over a cold, so am keeping to light and fruity fare.

It's warm and sunny outside so I've been making breakfast smoothies since yesterday:

1/2 banana
1/2 mandarin orange
1/4 Hawaiian papaya
3 lg strawberries
8 oz glass milk

blend....blend....blend....and mmmm..a rich and creamy milkshake!

I'm having these with two slices of a seedy whole grain dark toasted bread with a smidge of butter.

I am making Marilyn's Piggy Pudding, it is baking as I type. I have a small fruit salad of strawberries, blueberries and bananas to go with it and I will probably make a bagel (or cereal) for the picky one. There is also Orange/Tangerine juice, coffee and/or milk. Sorry - no photos, the old camera died and the new one is on back order for a few more weeks.....

Piggy Pudding

14 to 16 link pork sausages
2 large or 4 small apples (Yellow Delicious or Granny Smith); peel, core and slice
1 (8 1/2 oz.) package yellow cornbread mix
Ingredients to prepare cornbread mix
Sage to garnish and maple syrup for serving

Preheat oven to 400°. Cut sausage links into bite-size pieces and pierce with a fork to let the fat out as they cook. Brown sausage links in a skillet until no longer pink; drain well on paper towels and lay in a single layer in the bottom of an 8-inch baking dish. Arrange apples on top of sausages. Prepare cornbread according to directions on the box and pour over all. Sprinkle with finely minced sage for garnish. Bake 20 to 25 minutes until cornbread is golden and cooked through. Serve warm with maple syrup.

*Recipe from Paula Deen. Her recipe called for an oven temperature of 450° and bake 30 minutes in an ungreased pan (cornbread was getting too brown on top and still soggy in the middle). She also left the sausages whole and used tart apples such as Granny Smith. Garnished with sage after baking.

My husband has gone out for his morning bike ride and promises to bring some eggs back as we're out. Since he's doing that, I figured I'd make his favorite roast beef hash as we've a bit of leftover roast beef from the other night.

Diced Yukon Gold potatoes (with peel left on), about a half-inch dice, are steamed just a bit. Then diced onion is sauteed in a bit of bacon fat until limp, and the potatoes added to the pan to slowly cook until golden, with edges just starting to brown. Then I make a bare spot in the pan and add a big clove of finely minced garlic (if I add it with the onion, it ends up being browned and gets that icky burnt taste) and the diced beef. Depending on my mood I'll either sautee in a minced jalapeno with the garlic or if not, a good amount of black pepper. Salt doesn't go in until it's on the plate. Fried eggs with nice runny yolks to moogle together with the hash.

I'm getting hungry, sure hope it's a short ride! :D

I've one of those cute, individual sized watermelons in the fridge, which is pretty tasty, considering that it's only March yet (who knows where it's from) and a few blueberries. But we also just bought a big bag of luscious ruby grapefruits from Costco yesterday. Hmmm. Decisions, decisions.

Today's breakfast, Cream of Wheat with dried blueberries, toast, some more of the ham/bacon sausage and of course a big mug of coffee.

It's above freezing, so I'm going to go out and work on removing some ice build up that's on the deck. Then I'll play a couple of rounds of golf....on the Wii ;-)

I had two huge pieces of homeade white bread that I made with the "new" bread machine given to me by Ohiomom/Linda. With butter. Yum deluxe!

Any chance you could post the cookie recipe Deborah? Maybe you did already in another thread? I love cranberry anything!

Someone gave me a box of bengeit (sp?) mix, so I made some for breakfast to have with tea. Not traditional, I know, but I'm out of coffee. That's ok, the cinnamon and cardamom I added to the powdered sugar isn't traditional either. :) And since I then felt a littel guilty about the lack of nutrition, I followed up with a navel orange. Sorry, no camera, so no pic.

I'm off work today! Slept in till 1:30 PM. Dolly was giving the gotta go outside bark or I might still be sleeping.

Cooked up a steak and Annie rushed to camp out next to my chair. Told her she had to thank Tuna for teaching me to feed steak to cats. Washed it down with half a pot of coffee.
