Help me make my own flour, cracked grain etc.

I want to see if I can move to milling our own flour, making cracked grains etc. I have been reading reviews of nutrimill, wonder mill etc. but am not sure if they will do all that I want.

1. Mill flour for baking- bread, pastry,

2. Handle grains besides wheat -amaranth, spelt etc.

3. Mill rice, lentils, split peas into flour.

4. Make cracked wheat, cracked oats.

Maybe all of this is not possible? I am particularly concerned that the grain mills seem to not be able to mill non-wheat grains and the coarse cannot be controlled. We use cracked wheat a lot. I have tried using a simple coffee grinder for it and it is hard and generates too much flour.
