Theatre Party Tonight :-)

Hi everyone,

We're having a little get-together at the theatre tonight for a dear friend of ours who is back on a visit. She'll be leaving Sunday (which, oddly enough is my gram's 83rd birthday; the one who's lemonade recipe I shared). Anyways, I made my famous (according to you guys lol) Pink Lady Cake and some mint iced tea (from tea bags: Bigelow Mint Medley). Both were huge hits with them when I made them before. I'm going to dress up the cake pan and beverage container by attaching recipe cards to them so people can read the recipes :-).

Oh and I didn't like the looks of the fresh strawberries, so I bought a package of frozen (whole, unsweetened) to garnish the cake with.

If anyone would want either recipe, let me know!

Brad, you must be very popular with your theatre group - seems you are always taking treats. I bet there are a few ladies there who are thinking "now there is a guy who can cook!" What is a Pink Lady cake? Is it a regional recipe - I've never heard of it. I'm sorry if you've already posted the recipe - I must have missed it. Would you mind sharing it again? I think just by the name of it, it is something that I could make with my 10 year old neice, who loves to come here and bake.

We had a quiet family evening honoring our loved ones who have passed on; we chose not to do anything with our church-group-equivalent this year because I was tired of being the one to do all the work while everyone else just came along for the ride, and no one stepped up to take the reins. Last night was Beggars Night in my city - they never do it on Halloween itself. I bought twice as much candy as I did last year and we still closed down an hour early. The weather was perfect for trick-or-treating: clear, no wind, not too cold (I remember too many years of trying to figure out Halloween costumes that would accomodate either longjohns and thick socks or winter coats, hats and mittens) which I think brought out more people for longer treks. I kept the dog quiet upstairs since all the traffic upsets him while DH manned the door. He loves to dress up - this year's theme was "the Vikings invade Scotland". LOL

Annie, your girls would like this batch when I serve it lol. I'll be making it the day before, so it'll have time to get all the flavors combined. Luckily, the party's indoors and even then, it'll be in the evening, so, I hope no one wears nothing too warm. sounds so good to me. My DH loves egg salad with anchovies. When he was a young Air Force Cadet, he used to go to NYC on weekends and was so broke he couldn't afford much but used to eat the egg salad sandwiches at Grand Centeral station there.

In my experience frozen strawberries defrost all mushy and unattractive, but you may have better luck.

Thank you, everyone! We all had a fantastic time! Lots of good party food! Lots of people as well! I still have some cake left and very little of the tea left as well.

Jane, lol no ladies rushing after me, but that's okay since I'm not looking. The Pink Lady Cake is a recipe I got out of a cookbook mom bought from the Dollar General called Quick And Easy Family Baking: Cakes, Cookies, Pies. & Breads That Anyone Can Bake. It's a fairly new cookbook (2011). I'll be happy to share the recipe again!

Pink Lady Cake

1 18 oz. box strawberry cake mix (15 oz. works as well)
3 eggs
1 teaspoon lemon extract
1 20 oz. can strawberry pie filling

Preheat oven to 350 degrees. Beat cake mix, eggs, and lemon extract in bowl. Fold in pie filling. Pour in sprayed, floured 9 x 13 inch baking pan. Bake for 30-35 minutes. Cake is done when toothpick inserted in center comes out clean. Serves 12-16. Add prepared vanilla frosting or frozen whipped topping, thawed (I use the frozen whipped topping).

NOTE: I always sprinkle a little powdered sugar over the cake after I take it out of the oven, before I frost it.

Annie, my theatre friends (which we say our theatre family lol) always praise my cooking. I recieved a lot of compliments this evening on both the cake and the tea. Makes me feel proud of myself :-).
