Residential fire sprinkler question

We are remodeling a 3 story wood frame Victorian and have decided to put sprinklers over the stairs to provide a means of escape. The contract called for 6 sprinkler heads for the 2 staircases but I've worked out locations that cover it all from 4 points (the stairs are all open).

So I'm thinking about putting sprinklers in the kitchen and dining room (we have a lot of candle-lit dinners).

Is it unwise to put a water-based system in a kitchen because of the possibility of oil or electric fires?

Also, if I don't want to pay the exorbitant amount the plumber will charge for an additional head I'd need a sprinkler for the kitchen that reaches 16 feet in each direction. Do the sprinklers cover that much?
