I'm getting ready to order my kumquats!

After Christmas I will order my kumquats for the year. I ordered a 5 lb box last year and they were absolutely delicious and such a nice treat during the cold winter months.

I know I want to make some Preserved Kumquats that I will keep in frigerator. But I was wondering if anyone had any other canning recommendations.

Preserved Kumquats (Kumquate au Vinaigre)

1 lb kumquats

Kosher salt

3 lemons

1/3 c. white distilled vinegar

1/3 c. water

Place a layer of kumquats in the bottom of a clean 1 qt glass jar. Sprinkle with 2 T. salt.

Cut the lemons into 1/4" slices and sprinkle each side with salt.

Cover kumquats with a layer of lemon slices.

Continue layering kumquats, salt, and salted lemon slices until the jar is fulled.

Top with a layer of lemon slices. Add the vinegar and water to cover.

Seal tightly. Refrigerate for 2 weeks before using. Rinse under running water before using.

Keep refrigerated after opening to help maintain the brilliant color of the fruit.

Store in the refrigerator for up to 6 months.
