Questions re Annie's Salsa

I finally made Annie's Salsa and all I can say is WOW - thank you Annie! 2 Questions I have :

As the recipe can be pressure or HBH canned has anyone made it both ways and is there a difference in the end result ? (apart from the fact that the HBH one will be more vinegary because of the increased vinegar) Is the texture is better in the HBH one?

In one of the threads re how much is 3-5 jalapeno's Annie says that the hot peppers should come to about 1/4 cup but my chillies only weigh around 4g each (they only get sold as chillies here so I'm not sure what kind they are but they look like serrano's or jalapeno's)But to get 1/4 cup I'll need about 11 chilli's then ? ? ?
