Roasting Yellow Peppers/Yellow Roma Toms 4 Spread; Have Questions

I'm making my fourth batch of Roasted Pepper Spread -- this time with Yellow Peppers and Yellow Roma Tomatoes. I'm thinking it will be at least as delicious as the Red, which we now love! Anyone else ever made Yellow Spread?

So, when I'm peeling/picking off the skin from the peppers and taking out the seeds and stem, I notice some creepy things inside. They're part of the pepper, of course, but they're like 1.5 - 2 inch solid "worms" of maybe 3/16th of an inch thick. I don't know why, but going through all the "stuff" inside the peppers is making me feel icky. It's like High School Biology, and I didn't like that either.

Does anyone know what those things are that grow inside the peppers? I feel like I'm doing some invasive surgery that only an OB-GYN should be performing.
