SF muscadine jelly didn't gel...why?

I used Splenda and followed the directions to a T. Has anyone ever used Splenda to make jelly? I am diabetic and have had RNY gastric bypass surgery and cannot have sugar so I wanted to try to make some SF jelly and Splenda is supposed to work in jellies and jam....or so I have been told. I cooked the juice, sure jel and splenda until it sheeted off the spoon like it is supposed to and then gave it a cold bath for 30 minutes. When the jars sealed and cooled they looked like they jelled but when I looked at them later they are liquid!
