Well, it may not call itself spaghetti sauce, but there is "Chunky Basil Pasta Sauce" with fresh herbs and veges in Small Batch Preserving, and also "Roasted Vegetable Pasta Sauce" with both veges and fresh herbs in Small Batch Preserving, and also "Seasoned Tomato Sauce" with veges and fresh herbs that Small Batch Preserving suggests using in "pasta sauces, soups, stews, pizza, or casseroles." So, although the OP did leave the door open to reasonable questions about recipe safety, it is also good to take care in making broad statements about recipes which include such phrases as "there are no recipes which. . .", or "all approved recipes for (pasta sauce, salsa, whatever) MUST be. . ." since there may well be a safe recipe which allows such processing. For example: you CAN use fresh herbs in the approved NCHFP spaghetti sauce recipe, as this email from Elizabeth Andress states: Thank you for visiting the National Center for Home Food Preservation. > question -> Spaghetti Sauce without Meat: > 1. I can only recommend using the equivalent volume measures, though, and that may not give you the flavor you desire. Eg., instead of 2 TBSP dried oregano, use 2 TBSP minced fresh oregano. I do not have enough information to know the upper limit on how much fresh to add, so that's all I can suggest without testing. (which we cannot do). You can use basil as a substitute for one of the other herbs (eg, you may not want the parsley with basil). Or, if you are leaving out the celery and peppers completely, you could add 2 to 4 TBSP of basil. Yes, you can eliminate the sugar in this recipe. The chopped celery and/or peppers and the sugar add a little moisture/liquid in many recipes. In this particular sauce, however, it is cooked down to thickened consistency anyway, so the amount of liquid that would be added by these ingredients would not be important as it might be in other types of food products/mixtures. I agree it's extra work but sometimes it's more manageable to deal with a smaller batch of tomatoes than a full 30 pounds, depending upon your kitchen and your experience. There might also be a space consideration. How much extra room does your freezer have? If you are up to doing the entire batch at once and there's enough freezer space to accomodate the tomatoes, then Dave's suggestion is a more efficient one. Carol

Carol, I agree. I would truly leave out that oil. Yes, you would still add the bottled lemon juice since you are adding other ingredients. I think that much garlic is too much, also. This one has 20 lb. of tomatoes and only 8 cloves of garlic. Plus, only 1 T. of oil. Canning your own recipes is not suggested due to safety issues, it can put you at a risk for botulism. I would not can what you are telling us, but freeze it instead. I think it is best if you stick with the recipe from Ball Blue book that has basil in it if you wish to can one . Basil-Garlic Tomato Sauce Ingredients 20 pounds tomatoes 1 cup chopped onion 8 cloves garlic, minced 1 tablespoon olive oil 1/4 cup finely minced fresh basil Bottled lemon juice Instructions Prepare Ball® or Kerr® jars and closures according to instructions found in Canning Basics. Wash tomatoes; drain. Remove core and quarter tomatoes; set aside. Saute onion and garlic in olive oil until transparent. Add tomatoes. Simmer 20 minutes, stirring occasionally. Put tomato mixture through a food mill or strainer to remove seeds and peel. Combine tomato purée and basil in a large saucepot. Cook over medium-high heat until reduced by one-half, stirring to prevent sticking. Add 1 tablespoon bottled lemon juice to each pint jar. Carefully ladle hot sauce into hot jars, leaving 1/2-inch headspace. Wipe rim and threads of jar with a clean damp cloth. Place lid on jar with sealing compound next to glass. Screw band down evenly and firmly just until a point of resistance is met-fingertip tight. Process 35 minutes in a boiling-water canner. Yield: about 7 pints. cseim - oh my gosh - this one is so good and so fresh tasting...from AnnT Tomato, garlic and basil sauce  AnnT I par boil a couple of Italian sausage, just long enough to firm up so I can removed the skin. Then slice the sausage and brown in some olive oil. Add some minced garlic and season with crushed fennel seed and some hot red pepper (if you use hot sausage you probably don't need to add more hot pepper), dried basil, salt and pepper. Add one 28 oz can of quality Italian tomatoes, breaking them up with a fork or wooden spoon. Simmer the sauce while the water is boiling and then cook your favourite pasta shape. Add a handful of fresh chopped basil and serve. I vary this from time to time. Adding fresh rosemary or adding a little white wine before adding the tomatoes. Ann Another great one from Lorijean: Bowties with Sausage, Tomatoes and Cream - Lorijean 2 tablespoons olive oil 1 pound sweet Italian sausage 1/2 teaspoon crushed red pepper 1/2 cup diced onion 3 cloves garlic, minced 1 28-ounce can Italian diced tomatoes 1-1/2 cups whipping cream 1/2 teaspoon salt 3/4 pound bowtie pasta 3 tablespoons fresh minced basil Parmesan cheese 1/4 cup chopped fresh parsley Heat oil in large heavy skillet over medium heat. Remove casings from sausage, crumble and cook in oil with crushed pepper until sausage is no longer pink, about 7 minutes. Add onion and garlic and cook another 5-7 minutes until tender. Drain tomatoes, chop coarsely and stir into sausage along with cream, salt and basil. Simmer until mixture thickens slightly, about 4 minutes. In a separate pot of boiling salted water, cook pasta al dente. Drain pasta and add to simmering sauce. Garnish with Parmesan and parsley. Serves 4.
