Nope, sorry Flora but to do that, for it to be a valid test using the scientific method, you'd also have to do a control group that is "properly BWB processed". And I know you don't want to do that. ;)

Glad it is good. I wish I could eat those sugary jams. Just not the same with Splenda in them. Especially strawberry jam.

I've tasted my Strawberry Jam from '05. Color is off, flavor pretty much lost compared to the last couple of years' jars but it is definitely strawberry and better than that corn syrup on the grocery shelves. Jam does "keep" for a long time in those jars, just that the quality suffers (besides my favorite quote is "Sugar doesn't rot!)". For '08 jam, kept cool, dark, firm lid, no mold evident, it should be just fine, tasty, and present no ill effects by the consumers 2 years later. Enjoy! And send a check to linda_lou!

I've been worrying all day. As I was walking to work it suddenly dawned on me that making a joke about jam dated 9/11/08 might be seen as disrespectful by some people. I must explain that in the UK we put dates in day,month,year order ie 9/11/08 is the 9th of November not 11th of September. I hope no one thought I was being flippant about 9/11. Flora.

In our house it wouldn't matter if it was November or September - the Apple Pie Jam doesn't stick around that long! Out of the jams I've made so far, this one is the most popular. Everyone I've given a jar to wants to know when I'll make more. This year I plan on making twice what I made last year.

I'm also going to try it with less sugar using the Ball No Sugar Needed pectin. It worked wonders on some Peach jam I made this year. Lots more peach flavor than the regular jam. Hoping it does the same for the Apple Pie Jam.

I made this jam but people didn't like how much sugar was in it. I made another batch with the "no sugar" pectin and cut the sugar in half. Greatly improved.

I'm experimenting with this kind of pectin this year, as there aren't a lot of recipes for using it with reduced sugar instead of sugarless, and besides, recipes are meant to be broken. So far, the proportions ranging between 1/3 to 1/2 the volume of fruit seem to be working the best.
