Linda Lou's Apple Pie Jam

Can this recipe be doubled or should you make it as indicated and just make several batches. I understand that one recipe will make about 3 pints?

Only if you use a pectin like Pomona, as mentioned in mamy recent posts. regular pectin is not supposed to be made in double recipes. See the SEARCH below for further info

Agree with Ken that doubling batches often leads to jelling problems and poor results. Also increases chances of scorching while cooking. Just make several different batches for best results.

Now I have a bigger question that has absolutely nothing to do with food. It's about the ability you all have to give practically instant answers to the questions posted here. I asked the pectin question, said to myself...self you can't get an instant answer, just wing it. I took my jars out of the BWB checked the computer and voila! Answers. Are you all wired so that a light goes off each time a question is posted? Scary business, because y'all are busier than a one-eyed cat in a bird store and I don't see how you do it all. APPLE PIE JAM 4 cups tart apples, peeled and finely chopped 2 tablespoons lemon juice 1 teaspoon ground cinnamon 1/4 teaspoon ground allspice 4 cups sugar 1 cup firmly packed light brown sugar 1 box pectin 1/2 teaspoon butter Add water to chopped apples to measure 4 cups.(This is NOT 4 cups each, but water placed on top of the diced apples to come up to the 4 cup mark.) Place apples and water into large, heavy saucepan. Stir in lemon juice, cinnamon and allspice. Measure sugars. Stir pectin into fruit. Add butter. Bring mixture to full rolling boil on high heat, stirring constantly. Quickly stir in both sugars. Return to full rolling boil and boil exactly 1 minute, stirring constantly. Remove from heat. Skim off any foam with metal spoon. Ladle quickly into hot, clean jars, leaving 1/4" headspace. Wipe jar rims and threads. Cover with two-piece lids. Screw bands on finger tight. Process in boiling water bath for 10 minutes.

It isn't so much a safety question with jams although the sugar has a small role in preservation. It is as a jelling (set) problem. Most commercial pectins require a specific amount of sugar to set. If you switch to Pomona pectin - lots of discussions here about it - you can make it with no sugar at all if you wish. If you use a low sugar pectin you will still have to use the amount of sugar it calls for, which is a reduced amount, to get it to set. If you want to make really reduced sugar jams then Pomona pectin may be your best option. Dave

Thanks - I'll make several batches. Makes sense -- I'm new to canning and preserving - so I appreciate the responses.

Just to let you know that the last of my guestimated, unhygienic, unprocessed UK version of LLAPJ made last year is still sitting happily on my shelves being steadily depleted by the family. It's been a bumper year for fruit over here and I may find myself making more before the last lot's gone. Thanks LL.

I made 2 batches of this jam last night and it was awesome -- it is setting up nicely. I also made Red and Green Christmas (jalapeno) jelly and 3 batches of Habenero Gold -- wow that stuff has some heat to it. I feel like a pioneer woman! LOL This is all new to me so it's fun to have it turn out okay. On Saturday I made a quadruple batch of Annie's salsa so I should be good for the winter now! Thanks for all the help everyone!

I just made 2 batches of jam. They are in the water bath/steam canner right now. Looks pretty and tastes yummy. I did not put the entire amount of sugar. However, I thought it would make more than 4 1/4 pints.
I did see on a post that you can use Splenda. For someone who did so..... how many packets did you use? I thought I'd put about 1/4 cup regular brown sugar in too.
