Have I ruined my peaches? Rookie questions

I've only ever made strawberry jam, but this year since we bought a house and I now have counter space and storage, I want to branch out. This weekend I canned apple sauce and peach slices.

For the peaches I added a vanilla bean (split) and cinnamon stick to the syrup while simmering, but then fished out the big bits and poured the syrup through a mesh strainer while filling the jars. Should I not have done that? Will my jars keep? The syrup tasted amazing, so if this recipe is ok, I want to make more. A lot more.

I'm not interested in canning just plain peaches or pears, as I can buy those at all the local farmer/food marts and I don't have THAT much storage; I'm looking forward to making my own flavor experiments, but too late it occurred to me the vanilla bean might have been a bad idea.

Also, what other fun flavor combos would you recommend for a novice canner, bwb only? :-P
