What is better for peaches, raw or hot pack?
Comments (21)If peach pies and cobblers are the ultimate goal as they are for us, why not can it as peach pie filling? If you don't like using Clear Jel for some reason just can it without the Clear Jel and add your own thickener of choice as pie prep time. On the other hand peaches canned in the standard light syrup recipe can be used later for just about anything. But I do think I'd leave the pit out. Granted it can impart some additional flavor initially but with shelf time it can also turn quite bitter and turn the whole jar off-flavor. Not to mention that they are a potential source of contaminants and it is difficult for the heat to penetrate them during canning. Dave...See Morefirst year canning - cold or hot pack tomatoes?
Comments (15)Christine That's the way my family has done it for years, the only difference that we do is the lids. We cook the tomatoes the same way and put them in the jar hot. But the lids and rings are put in boiling water in a small sauce pan, taken out and put on the jars with tongs(not as hard as it sounds) Screw them down tightly using a towel to protect your hands. We put them on a table covered by a towel to hold the heat and check after they have cooled(a few hours later). Press the tops if they don't pop they have sealed correctly. Take the rings off an use on the next batch(money saver). These will be good for years to come. I am 40years old and my grandmother taught us and she is 87 this year. Easiest and quickest way to can and tomatoes you will be proud to give to anyone....See Moreorganic nutrient - raw honey
