Apples, Apples, Apples

I have six different apple trees on my property, all different varieties. How do I tell when they get ripe? I believe one of the trees' apples are ready, but I want to make sure--I've got big plans for them, and don't want my Christmas gifts to be made from unripe apples! : )

I went picking at an apple orchard last year. The man running the farm said to give the apples a quarter to half turn and pull. If the apple came off easily then it was ripe. If it was stuck in place it wasn't ready yet. Worked for me and him...

Pick one from each tree and taste.. Sometimes apples can ripen at diferent times even on the same tree. I had a couple that were a bit dry and mealy, but most were nice and crisp and juicy. The two trees I have do ripen at slightly different times, and most are always green with just a red blush on the exposed side. I picked all from one tree and most from the other so far, and have already made a big batch of apple pie filling. The spices used were cinnimanon, nutmeg, ginger, and some cardamom. These apples remained firm even after the whole batch was brought to a boil. I use some added acid too, because I prefer a thicker filling, and had used Splenda as the sweetener. Love that hand crank apple peeler, corer, slicer. Turn the crank and your apple is all done in 3 seconds or less..

I also hate to be pessimistic, but even if it the label said "no sugar," that doesn't really mean much to me. The juice companies often strip juice (white grape and apple are commonly used) of every redeeming quality *except* for the sugars, then blend that with juice. Then they get to say "no sugar." However, by that point, it's not all that different from sugar nutritionally, IMO. (Which, it seems that many people forget, is a plant product, and therefore "all natural"!)

About the only thing I can think of is to hot pack the apples plain, using water or unsweetened apple, white grape or pineapple juice instead of a sugar syrup (per NCHFP: "In canning regular fruits without sugar, it is very important to select fully ripe but firm fruits of the best quality. Prepare these as described for hot-packs for each fruit, but use water or regular unsweetened fruit juices instead of sugar syrup. (For more information see additional publications for individual fruits.) Juice made from the fruit being canned is best. Blends of unsweetened apple, pineapple, and white grape juice are also good for filling over solid fruit pieces. Adjust headspaces and lids and use the processing recommendations given for regular fruits. Add sugar substitutes, if desired, when serving.") You could then use them in a lot of different recipes. This is a fantastic Apple Bread from the Ruralite cookbook, circa 1977. The recipe itself is dated 11/73 and is from a Mrs. Donald Waters, Fernwood ID. Fresh Apple Bread 1 c. sugar 1/2 c. shortening 2 eggs, beaten 1 c. ground or grated apple (I just dice fine) 1/2 tsp. salt 2 c. flour 1 tsp. baking soda 1/2 tsp. vanilla 1 c. chopped pecans or walnuts, floured 1 1/2 T. buttermilk Cream sugar and shortening. Add beaten eggs and apple. Mix in dry ingredients. Add vanilla, buttermilk and nuts. Pour into greased/floured loaf pan. Sprinkle top with 3 T. sugar and 1 tsp. cinnamon. Is anyone growing rose apple / water apple

I bought a red variety of malay apple last summer, about 2 ft tall. Planted in the ground without any amendment , move it three times and now is about 5-6 ft tall and looking happy. I am thinking of air layering it because the location is not ideal but the plant is too big to move. As far as I know, the plant/tree is very large when mature. I remembered (from my childhood before moving here) them as being as big as mango tree, must be more than 30 ft tall.

I'm so excited to see this thread, because my neighbor just gave me permission to raid her beautiful apple tree! I went over and also couldn't tell if they were ripe or not, so I twisted about 3/4 turn and it came right off. I'm so glad that's a good way to tell ripeness. Now I'd better get all set for canning on Friday.

It isn't quite apple season around here yet, but it's coming. Last year, I went on a binge putting up apple sauce for adults.

I made brandied braeburn with pecans, granny smith with cardamom, fuji with cranberries (very pretty, polka dots!)I even made some bartlet pear sauce with fresh ginger.

Applesauce is wonderful, not only to have around to dress up winter dinners, but as little gifts for friends...something a bit different from the usual jam.

Summer apples will be coming in in Aug/Sep. You also have to be careful with which side of the tree you are picking. The North side will ripen last so do test as you pick.

Personally, I think the early summer apples make the best sauce.
