Apple bread? Apple Loaf? Apple Cake?

I made a recipe a few months back for my Aunt & Uncle that was apple bread, apple cake or apple loaf (I think!) The recipe came "Grandma's Wartime Baking Book". The book belonged to my mother. She's a pack rat and can't find the book now. My aunt requested the apple delight for Christmas. I would love to make it for her. She's asks for so little but I'm stuck! The book it out of print now.

If you have this recipe or a great apple bread, apple cake or apple loaf recipe I would greatly appreciate it. Thank you!

Is this the cake? I don't think you can print off the recipe from here, but you can definitely see the whole recipe (and type it up yourself if this is the one). The one I saw was on page 30:

This is a fantastic Apple Bread from the Ruralite cookbook, circa 1977. The recipe itself is dated 11/73 and is from a Mrs. Donald Waters, Fernwood ID.

Fresh Apple Bread

1 c. sugar
1/2 c. shortening
2 eggs, beaten
1 c. ground or grated apple (I just dice fine)
1/2 tsp. salt
2 c. flour
1 tsp. baking soda
1/2 tsp. vanilla
1 c. chopped pecans or walnuts, floured
1 1/2 T. buttermilk

Cream sugar and shortening.
Add beaten eggs and apple.
Mix in dry ingredients.
Add vanilla, buttermilk and nuts.

Pour into greased/floured loaf pan.
Sprinkle top with 3 T. sugar and 1 tsp. cinnamon.

Bake at 350 about an hour or until toothpick comes out clean.

WOW!! That looks so good. I use my bread machine all the time. Most of the time for mixing dough and baking into rolls,hamburger buns, pizza dough or pain de mie (special loaf pan bread for sandwiches) You will love make bread and quick breads in your machine. Much less expensive that store bought and you control the ingredients Linda

I don't know the answer to the pear and apple questions. I used red delicious because that's what I had a bunch of (they had bags of them on sale cheap at the grocery store). If it were me, I wouldn't hesitate to use any kind of apple I had on hand. I might use pears, not sure how they cook though because I don't have much experience with that. If the pears were really soft and juicy, I think that might affect the bread, but again, that's totally a guess. Carol! Nancy! yooohooo! :) Any comments?

here ya go....those formatting problems with the fractions are really beyond annoying! Apple Cake 4 cups chopped apples 1 1/2 cups sugar 1/2 cup raisins ( I use chopped other fruit like dried peaches or apricots) Mix and let sit for about an hour ( less is OK) 2 cups flour 1 1/2 tsps baking soda ( I like 3/4 tsps soda and 3/4 tsps BP) 3/4 tsps salt 1T cinnamon 1/4 tsp nutmeg Mix dry ingredients 2 eggs 3/4 cups veggie oil 1 tsp vanilla beat together 1 cup chopped pecans if desired. Add the oil and eggs to the apples and sugar and dried fruit. Stir in the dry mixture and add nuts if desires. Pour into greased 9 by 13 pan and bake 350 until doneÃ¯Â¿Â½..40 to 50 minutes. Serve with cake gravy! Cake Gravy Mix 1 cup sugar ..half brown half white 1 stick butter 1/2 cup light cream 1 tsp vanillaÃ¯Â¿Â½. Mix all and cook all in a sauce pan for about 5 or 6 minutes until caramel colored. Serve warm over the cake.

I agree, I think you should use whatever you have readily available. I've made apple cakes with Golden Delicious, MacIntosh, HoneyCrisp, Empire, Wolf River. It's all good. If the recipe is one that calls for grating the apple, then it matters even less, although I admit I like the apples that stay a bit more firm (Empire and HoneyCrisp) as opposed to those that cook up really soft (like MacIntosh and Golden Delicious) Annie
