I have learned that I am supposed to flip my jars over if the brine isn't covering all the pickled whatevers. Do I flip after the initial 24 hours, or after two weeks upright, or what? What is keeping the food safe; being in the brine, or being in the sealed jar? IOW, am I flipping it so that the entire pepper will get pickled or so it won't kill me, or both?

Once flipped, the garlic clove is up out of the brine completely (it was placed in the bottom of all the jars.) Is that a problem?

The peppers were short enough - they just all floated up. I thought they were in that happy place of being packed just enough to stay put and not too tightly so as to have creepy stuff grow around them. I don't mind flipping them. Easier than wondering if there's botulism. But then, I could always inject it into the worry lines that canning is creating on my face ;-)
