Shy on Pickle Juice

This is canning day for my Sweet Chunks. I started with 1 peck of pickles. After the 4 days of boiling water, I made a double batch of the sugar vinegar solution and 2 pouches of pickling spices. After 3 more days of reboiling the syrup, I filled 16 pint jars with the pickles and added the syrup to 1/2 inch. I had just enough syrup to fill jar 15.

I got out my trusty little chopper and chopped this last pint until the chunks were about relish size. I then added 3 tbls. of mustard. I thought it would be dry, but with the mustard added, it tastes better than any hot-dog relish I've ever had. The consistency is perfect.
