Newbie with Jam questions...

So I did my first experiment with making jam yesterday and it was much easier than I thought. I used the NCHFP recipe for Peach Jam with powdered pectin then did a 5 minute water bath. My only problem is that it does not seem to have gelled up properly. It certainly isn't a consistancy of a store-bought jam for sure. It seemed that I ended up with a lot of liquid. Any ideas on what caused that? Anything I can do about it now or should I just enjoy these over ice cream and things like that?

The canning part seems to be successful however. The jars are definitely sealed.
