Strawberry Jam - recipe question

So I'm doing the "Favorite Strawberry Jam" in the Ellie Topp book. I've already cooked them the first time and I'm at the point where I let them sit for 24 hours. (This is my first time making a jam - so extra newbie alert)

So here's my question - Can I wait LONGER than 24 hours or would that be really bad? It would put me doing the final cook and then canning the jam tomorrow morning right before work. I can do it, but I'm really not looking forward to it ;) Could I wait until I got home from work to do it (it would be sitting out about 34 hours instead of 24).

The thought of having them sit out at all is a bit freaky to me in the first place. So if I need to can them before work, I'll do it...Just looking for thoughts or opinions :)
