Strawberry Jam - recipe question

So I'm doing the "Favorite Strawberry Jam" in the Ellie Topp book. I've already cooked them the first time and I'm at the point where I let them sit for 24 hours. (This is my first time making a jam - so extra newbie alert)

So here's my question - Can I wait LONGER than 24 hours or would that be really bad? It would put me doing the final cook and then canning the jam tomorrow morning right before work. I can do it, but I'm really not looking forward to it ;) Could I wait until I got home from work to do it (it would be sitting out about 34 hours instead of 24).

The thought of having them sit out at all is a bit freaky to me in the first place. So if I need to can them before work, I'll do it...Just looking for thoughts or opinions :)

Put them (the whole pot) in the fridge and that will buy you as much time as you need! --Gina

Laura, I am unfamiliar with the recipe... Do they sit out not in the refridgerator? If so what I would do is put them in the fridge before leaving for work and then can them when I got home. I have several recipes that call for macerating the fruit (letting it soak with sugar) in the fridge overnight and i have let it macerate for longer without any problems.

Thank you! That was exactly my thinking when I decided to go for it. Our homegrown bananas are small. By the time I smushed/mashed it up good and added it to the berries, there are only tiny bits of bananas suspended in the jam. I didn't make an all-strawberry jam with the bananas...the berries are mixed...dewberries, blackberries, and strawberries. I used commercially bottled lemon juice. I was actually surprised by the wonderful flavor of this jam. I caught my husband eating the partial jar of leftover jam that didn't make it into the canner. He was eating it like dessert! Nothing like cleaning out the freezer getting ready for spring! I also made a batch of berry-pineapple jam. I had an 8 oz jar of pineapple, leftover from some recipe that didn't use the entire can. I used another Certo recipe for this one---Strawberry pineapple jam, but it was the same mix of strawberries, dewberries and blackberries that I'd deseeded through my Roma Sauce Maker. Tastes pretty darn good, but not as good as the Berry-Banana. I also added a teaspoon of vanilla to each batch of jam. That's my homemade vanilla, with 100 proof vodka and organic vanilla beans. Personally I don't see any safety issue with leaving it out either. Not with all the sugar and then the boiling. I think whether doubling works or not depends on 1) the size of the original batch. Topp's tend to be quite small. 2) The experience of the cook and the equipment. If you're new to preserving, especially no-pectin preserves, I wouldn't recommend it. Rhubarb and strawberry and both unreliable setters as it is. And if you're working with a makeshift pan, that can increase the likelihood of over-cooking before you hit the jell point. Carol

Please be assured that if Pomona is used, the recipe can set even if it was tripled, and no sugar was put in. If you use the whole box, it can do a bit over 20 jars. I also used all of the tiny tasteless packet of calcium. Be sure to get the powder mixed well in cool juice first though. I use a blender and, and whizz small batches of it with the juices, then pour each blender batch into a big pot, bring to a boil, stir, and then add the calcium water. Stir constantly. Lift out the spoon and it will be well coated already setting up. Love it!

Jams with commercial full-sugar pectin have more sugar than any other type, including traditional jams with no commercial pectin. With those recipes you have more latitude. The only thing I can think of is to make a second batch of jam using a low-sugar or no-sugar commercial pectin, or a traditional jam without added pectin (which would also call for lemon juice), opening two jars at a time and stirring them together. Another possibility is adding some acid for tang to the finished jam. If you have 8-oz. jars, upon opening you could stir to loosen and add 1 tsp. fresh lemon juice. It's still got just as much sugar but that at least would reduce the cloying sweetness. You could also add citric acid powder or an acid blend and stir that in, though I'm not sure if that would be any more productive than using the lemon juice. Good luck. The worst that could probably happen is that it would be extra juicy, and after sitting 24 hours, I really doubt that another 10 is going to hurt. If they're unrefrigerated, there might be just a little fermentation going on, so I would definitely stick them in the fridge. Jelly and jam is pretty tough to turn into a hazard. After all, it's all sugar. What's to go wrong?

I double checked and it's almost exactly like one that's in Ball Blue book also (Heirloom Strawberry Jam or something like that)...but it doesn't say to put it in the fridge.

I'll just play it safe and can it up in the morning. Next time, I'll get my hiney in gear and do it when I'm supposed to so I won't have this problem ;)
