This is my favorite potato salad. It's my mom's recipe, and I'm not sure whether she created it herself or my grandmother did. Or maybe it was just a tradition brought over from the old country. It's definitely different and always gets rave reviews. My entire family and now our children's families love it. Patatosalata (Greek Potato Salad) Fresh, lively, and bursting with flavor. This salad brightens any meal and is a delicious alternative to the typical mayonnaise-laden versions. 2 - 2 1/2 lbs. wax potatoes (white, Yukon Gold, or red) 1/2 cup extra virgin olive oil Juice of 1- 2 large lemons (I usually use 2 lemons) 1 red onion, finely diced 1 cup finely chopped fresh parsley 1 teaspoon dried Greek oregano (optional) Salt and Pepper to taste ⢠Finely chop onion and parsley. ⢠In a small bowl, combine olive oil, lemon juice, oregano (if used), parsley, 1 teaspoon salt and onion. Mix well and set aside. ⢠Wash potatoes well. ⢠Add potatoes to a large pot of boiling, lightly salted water. Cook potatoes at low boil for about 15 - 20 minutes, or until potatoes are just tender. Do not overcook. ⢠Drain water and let potatoes cool slightly to touch. ⢠When slightly cooled, peel and cut potatoes into slices or large dice (If desired, leave skin on red potatoes). ⢠Place potatoes in a large bowl; add dressing and season with additional salt and pepper to taste. Toss to coat. ⢠Cover bowl and refrigerate for several hours or overnight. Stir every once in a while to redistribute dressing.

Well, you can send all the baby reds to me & that takes care of half your problem. Seriously though, baby reds are fantastic just boiled skin on & served w/ butter, salt & pepper. Alternatively, they're also very good roasted w/ oil & garlic. I would even mash them, skin on. That's because I just love red potatoes. Reds aren't considered a good masher. A dish that I love but my family doesn't is to grate raw potatoes, tie them up in an old dishtowel & 'wring' the excess water out of them. Heat a nice OO in a saute pan & lay the potatoes in, mashing them into a flat pancake with a spatula. (Season w/ S & P) Cook until well browned & the potatoes on top are just starting to get soft. Flip them and just a couple of minutes before they're ready to come off the stove, top w/ crab or imitation crab, cubed fresh tomatoes & fresh (preferably) basil. Sounds like a weird combo, but it really is very good, my family's opinion not withstanding. Another thing I like to do is to grate cooked potatoes and mix into pancake batter. I usually use a pancake mix. Cook your potato pancakes & serve w/ butter & hot maple syrup or just applesauce. And then there's 'New Potatoes & Green Beans'. My mom made this a lot. Cook the baby reds w/ fresh green beans seasoned w/ either ham or bacon, some onion and water to cover.. This is one of those dishes that is good overcooked to the point that the potatoes are wanting to fall apart and even better heated up the next day as leftovers.

Or just leave them in their foil until they turn the color of my toe and throw them out. :) The toe is healing nicely, thank-you, and car #1 has finally gone to the dealership. Car #2 is still being fixed. I did get to do a couple of errands after the tow, and now my other ankle is complaining about taking up the balance duties of the opposite pinky. I should cook, but I think I'm playing hooky tomorrow. ;) I was out eating a romaine-free salad tonight, but did filch some fries from my companion, who never finishes them anyway. The quip is smile-worthy. All good. I've often seen a hand of ginger, but that's the first foot of potato I've seen! Sherry, that rock sounds as immovable as the bathtub! "Restaurant size" potatoes is what they're called. though, as you say, many restaurants serve larger ones. Two pounds though? Wow. I can't imagine wanting to bring home an uneaten half of a potato the way I would half a chicken serving or half a sandwich. And here I thought one pound potatoes were huge!
