LC46, those fingerlings can be halved or quartered and roasted with a bit of olive oil and salt and pepper, my favorite way to have fingerlings. I grew a couple of 5 gallon buckets of them, but I'm Irish/Native American and I grew up eating potatoes for at least two meals every day!

I've made french fries for the freezer by cutting the potatoes, dry them well, fry until just starting to turn brown. Freeze them flat on a baking sheet, then shovel into a bag, they can be baked or fried. French fries are crispier if they are fried twice anyway.

I've made mashed potatoes and frozen them in muffin cups, then packed them into bags and the girls took a "muffin" out and stuck it into the microwave for a quick snack. That worked better if I used chicken broth in place of milk to mash the potatoes for some reason.

Oh, and there was a potato thread in the cookalongs, but I'm thinking that between scalloped potatoes, hash browns for breakfast, maybe some mashed potatoes with sauerkraut and creamed corn for Ashley, a pot of potato soup, and leftovers go into homemade bread...

Freezer Mashed Potatoes

5# potatoes
Cook as you normally would for mashed potatoes (with or without peel - your choice). Wash the potatoes well if leaving the peel on.

Drain. Add and mash:
6 oz. cream cheese
1 c. sour cream
1/4 c. butter

I make dollops on a Silpat-lined baking sheet with an ice cream scoop, quick freeze them, then place them in a FoodSaver bag. One or two works well as a serving, or enough to cover a Shepherd's Pie. You can also freeze them in plastic containers in user-friendly amounts.

If you normally add garlic to your mashed potatoes, it tends to get MUCH stronger when frozen, so I'd suggest leaving it out.

This may not be the answer you're looking for, but if DH really doesn't eat them... Return them to Costco? While I know they wouldn't have taken back the ground turkey, I'd imagine they'd accept the potatoes...

Well, you can send all the baby reds to me & that takes care of half your problem.

Seriously though, baby reds are fantastic just boiled skin on & served w/ butter, salt & pepper. Alternatively, they're also very good roasted w/ oil & garlic. I would even mash them, skin on. That's because I just love red potatoes. Reds aren't considered a good masher.

A dish that I love but my family doesn't is to grate raw potatoes, tie them up in an old dishtowel & 'wring' the excess water out of them. Heat a nice OO in a saute pan & lay the potatoes in, mashing them into a flat pancake with a spatula. (Season w/ S & P) Cook until well browned & the potatoes on top are just starting to get soft. Flip them and just a couple of minutes before they're ready to come off the stove, top w/ crab or imitation crab, cubed fresh tomatoes & fresh (preferably) basil. Sounds like a weird combo, but it really is very good, my family's opinion not withstanding.

Another thing I like to do is to grate cooked potatoes and mix into pancake batter. I usually use a pancake mix. Cook your potato pancakes & serve w/ butter & hot maple syrup or just applesauce.

And then there's 'New Potatoes & Green Beans'. My mom made this a lot. Cook the baby reds w/ fresh green beans seasoned w/ either ham or bacon, some onion and water to cover.. This is one of those dishes that is good overcooked to the point that the potatoes are wanting to fall apart and even better heated up the next day as leftovers.

Twice baked potaoes freeze and reheat great too.

fearlessem: from our own experience - yes Costco will take them back and refund your money. But they will throw them out because they can't resell them, not knowing how they were stored.

Store those potatoes in a cool dry place, like your refrigerator vegetable bin and you will have weeks to make up your mind.
Make some potato soup of the Youkon gold...make Hassleback potatoes from the fingerlings....and cream the little reds...with dill...
Seriously....they ought to keep easily until after Christmas.

The best potato salad I have ever made was with Yukon Golds with the peel left on. Eventhough Yukons are usually small they make wonderful baked potatoes.

I always leave the peels on "waxy" potatoes for mashed, salads or whatever...

I make freezer hash browns in 5lb increments when I have excess spuds. (skin on always for these too)

This time of year Costco potatoes will last quite a while before sprouting. Don't store in fridge unless you like them to turn sweet but not like sweet potatoes. I made that mistake once but not with 20 pounds, luckily. Just store them in the garage now that it's cooler. Keep an eye on them in case they sprout, they need to be knocked off and used right away if that happens. All the kids I know love potato salad as long as they don't detect veggies in it, at least half my grandkids. Twice baked potatoes are good to freeze but they will take up a lot of room in my freezer. I don't usually make potato dishes but use them in many recipes just to extend them, cutting down on the meat quantities. I love mashed potatoes but they don't look good on me. I freeze twice baked potatoes all the time and they reheat wonderfully. The key to good ones, to me, is to add a huge amount of melted butter and milk. Whip the potatoes until very creamy. Basically, soft, creamy mashed potatoes in a baked potato shell. Top with shredded extra sharp cheddar.
Everyone always likes them a lot when I serve them.

If they are returned, one can hope that Costco has a relationship with a local food bank or soup kitchen. If you store them, keep them in a dark place.
