Peach Pie Filling ClearJel

I made 7 quart jars of peach pie filling following the recipe at pickyourown.org which is the same as the NCHFP recipe. It calls for 2 cups of regular ClearJel, which seemed like a lot, and expensive too. Well, the stuff is so much more filling than peaches that it is more like loose jelly with peaches stuck in it here and there. How much could I reduce the amount of ClearJel by since I'd really like to have a lot of peaches with a little thickener and some sugar, like the real pies I make? Do you see any problem using the same sugar content (1 cup per quart)?
