Dehydration for preservation

I was wondering who here dehydrates primarily to preserve their harvests?

I want to do something that won't take up too much space because I don't have an extra freezer for storage but I do plan on doing some canning also. And coming up with the money for a freezer is a problem too, I might find something on freecycle/craigslist/garage sales but no guarantee.

I will dehydrate greens which I will only use for smoothies. And probably a good amount of fruit for dried fruit (muskmelon, mulberries, peach, apple) cereals throughout the winter. Other than that what are people's experiences with say dehydrated zucchini, green beans, tomatoes, corn, etc. I would imagine most things would be alright rehydrated and made into a soup or what about even a salad?
