Comments (8)well, we can't eat everything raw....our bodies are no longer built to withstand that much roughage...... so if you absolutely have to, use the microwave, else, steaming vegetables (not boiling) is as far as I know, the best way to keep in the nutrients... baking was always good... avoid as much as you can of course cooking on charcoal... but hey , they automobili pollution is what is going to get us as we sit around talking about these things........See MoreFirst attempt at induction cooking & pressure cooking
Comments (20)Bobby, I'm sure you will have a great time with Cathy on Tuesday. Kevin and I are thinking about a trip to Florida ourselves because he has a friend in Tampa he went to graduate school with, and she has been begging us to visit and stay at her house. I think it would be a nice trip, but as Gina noted before, there aren't good flights between L.A. and Tampa, and so we thought we might fly to Orlando, rent a car there, and then drive to Tampa. I have no idea when we will get around to this. I have to say that I am extremely careful about pot placement on my induction cooker, and so it is always centered in place. The PC pots are exactly the right size for this burner, and so I have not been concerned about the control buttons, but I will keep that in mind. I do love the timer, and yesterday I cooked a bunch of potatoes with some onion plus one cup of water. I closed the lid, set the cooker to #10 (highest heat) for two minutes and then turned it down to 250 degrees on the temp scale and set the timer for 10 minutes and let it go. I was waiting for sausages in the smoker, and when they were done, so were the potatoes, and oddly enough, there was no water left. I think it escaped as steam when I opened the steam valve. That was a new experience for me! So we only had potatoes and sausage last night, but we also smoked a large boneless turkey breast that I will use for sandwiches, etc. We also assembled our Big Green Egg (much more of an ordeal than we expected, partly due to insufficient/faulty instructions) and put up lights in the pergola. I can see that we will be spending a lot more time in the pergola, now that it is properly lit. I'm looking forward to cooking more things in the PC! Comments (15)Subject: Ensure Ice Cream A family member has had health issues lately and his doctors have recommended Ensure. But if you have ever tried it, (and I did, out of solidarity), you might find as we did, that it is dreadful. Even more so, if you are under 85 years old. However, I did find a recipe for Ensure ice cream that is pretty good. My family member said it is a huge improvement. So, here it is for those of you who know someone who drinks Ensure by necessity and not choice: Ensure Ice Cream Ingredients: 1 envelope unflavored gelatin 2 Tbsp cold water 3 Tbsp sugar 2 Tbsp light corn syrup 1� cups of any flavor Ensure 3 Tbsp vegetable oil 1 tsp vanilla extract 1) Soften gelatin in cold water. 2) Add sugar and corn syrup. Heat slowly to dissolve sugar and gelatin. 3) Combine Ensure, oil and gelatin-sugar mixture. Mix well and pour into blender. Blender capacity should be at least 5 cups. Blend for a few minutes on high. 4) Add vanilla extract, if desired, and mix well. Or add fruit to the blender at this point. Blend well. 5) Pour blended mix into an 8x8 square pan (or individual dishes. Freeze until very firm. Make three � cup servings. Comments (15)we had tv's and recliners so usually had my feet up and watched what ever was on...our cancer center is situated on large pond, so did a lot of bird watching...on the gloomy days read, too..a good trashy forget it all novel...i also took a bread and butter sandwich or something to eat cause no matter how early you get there it always seems to go past lunch hour... by nature i'm nosey so loved the times near the nurses station... and i wasn't afraid to smile at other patients...we all know why we're there... did my own driving, thank goodness, but sure slept a ton after i got home... that's what you can do if you're able is to drive and pick up...laundry...shopping, ect...this is the time to look ahead and not the what ifs...and remember she's still your rock, best bud, and cheering squad...cancer is one fraction, NOT the entire person...i'm still grandma, wife, mother, friend, and oh yeah, cancer survivor...
