"What's Tiramisu?... you'll find out" Thanks for the Pumpkin version, FlowerLady: a sweet treat to enjoy while watching a sweet movie. Nell's Brownies sound like they'd be great with the cream cheese frosting, too, if one has the patience to make it. Similar to what's traditional on carrot cake? Maybe we make little almond paste pumpkins instead of carrots to decorate. Ana, who uses oven-roasted, home-grown, butternut squash, cooled and mashed, in place of pumpkin with good results. Comments (49)Yes, the whey is clear and a bit yellow. When you heat it you start to see bits of milk protein forming in the whey, that's the stuff that becomes ricotta. Mike, I salt when I pull the cheese and I make it when I want it, I don't try to store it. It gets a texture I don't care for when I try to store it in brine. I heat it on the stovetop, although I've been known to reheat in the microwave when it gets too cold to pull well. I'm still just starting on this, I took a cheesemaking class a few months ago. I use my old Harvest Maid dehydrator to make yogurt, but I don't have very much whey when I make yogurt, so I wouldn't get much ricotta, I don't think. Comments (10)The story on my 5lb tub for $5. I knew this was a bargain and still had 10 days on the expiration date. Ever heard of Dot Foods? They are the #1 food redistribution in the nation. Their corporate offices are in our small farming community of 1900. Yes 1900. They are owned by the Tracy family. For some time they have a food store here in town. Merchandise is from broken cases they cannot sell. Two years they open a new modern store downtown called Dorothy's Market. They have all sorts of food to sell. In the new store they offer more than from the broken cases. Frozen fish, fruits, cakes, cookies, bread dough, spices baking supplies, can goods which a lot is in gallon cans, also glassware. Some fresh meats such as whole pork tenderloins, whole beef tenderloins, they offer quite a variety at discount prices, some really good prices. It is a fun place to shop. Dot Foods sell to restaurants, institutions, etc. They have food distributions in 7 locations across the country, The Tracy family share their good fortune through out the communities, with donations to food banks, scholarships to young people, always donating to many benefits.
