Comments (12)This is another simple recipe. Serve with rice. Bean Sprouts with Pork 3/4 pound of ground pork 1 white onion sliced 1 stalk celery sliced thin on an angle 2 garlic cloves, minced or grated 1 inch piece of ginger, grated 2 or 3 Thai red chili peppers, sliced 2 to 3 cups Bean Sprouts Peanut oil Scallions sliced on an angle Salt Pepper Heat Wok over high heat. Add just a little peanut oil and add onions and celery. Cook for a few minutes stirring often. Remove from pan. Add a little more peanut oil and saute ground pork until no longer pink. Season with salt and pepper. Add minced garlic and grated ginger. (I use a microplane). Return the onions and celery to the wok. Add the sliced chili peppers. Stir to combine. Cook for a few more minutes. Add the bean sprouts, cook just long enough to heat through. As I posted last month, my DH has broken several teeth recently and won't get implants till October, so I've been cooking soft foods exclusively since early July (I'm not going to cook two separate dinners, so I've been eating soft foods as well). The main difference, aside from the omission of solid meats, is the change in the proportion of protein to carbs: I tend to add a smaller amount of ground meat to a rice or pasta dish than I would serve as hamburgers. But I think that's actually a good thing! I've made every one of Chase's suggestions; we especially like the Shepherd's Pie. I also made a big lasagna and froze the portions separately. Another suggestion: crab cakes. Actually, almost any fish or crab dish is easy to eat, as long as you omit the crunchy additions and toppings. Canned tuna or chicken, mixed with a little mayo, can accompany a pasta dish; without the dressing, it can be added to a rice pilaf or sauteed vegetables. You might be able to manage meatloaf, too. You'll probably be able to eat most well-cooked veggies, except corn on the cob. Baked potatoes and sweet potatoes are fine, too. Avoid raw veggies, nuts, seeds, and raisins. Comments (61)Eggs should not be washed until (if necessary) just before using. The bloom on the outside keeps them fresh and also prevents nasties from getting into the egg through the porous shell. That the US government insists on eggs sold in grocery stores being washed is just another instance of the lawmakers having a poor understanding of how food safety works. @KW PNW Z8, it's a long story. Start with all the indigenous people being removed to reserves outside of town in the 1940s and 50s. then when the reserves were broken up in the 70s, people from differing, traditionally warring tribal groups were rehoused in the town, often living next door to each other. The fighting continues to this day. Then also, the town is the district centre for support services for those who are indigent, having mental issues, drug issues, you name it. Often these people don't have their own vehicles and there is no public transport between towns and only few taxis in the main town, so most of the people requiring such support are located in this district centre. Education levels are poor, mainly because a sadly large number of parents don't parent, either too out of it on drugs and/or alcohol, or they don't know how to due to their great grandparents having been removed from their families by then government practice and raised in orphanages. These ancestors have passed on their lack of parenting skills through the generations. It's a sad mess, and even sadder, there is resistance to changing the status quo.
