Never heard of it. Anyone have a way to heat rhubarb w/o all the sugar? We love it, we have scads but really don't want all the sugar.

If the stalks are firm and juicy, no reason to stop harvesting it. Lots of people mix it with sweeter fruit to cut down on sugar...strawberries, raspberries, apples, etc.

While technically, you can keep harvesting rhubarb until fall, keep in mind that your rhubarb plant needs to store energy for the winter. Significantly slow or stop your rhubarb harvest in late June or early July so that your rhubarb plant can build up energy stores to make it through the winter. Again, it can be picked until the frost, but do so sparingly or you risk killing the plant. Also, if your rhubarb is newly planted, you will want to wait two years before taking a full rhubarb harvest from the plant. This will ensure the plant is sufficiently established.

Yes it's always edible. The question is what over picking will do to your plant. Yes one can add other fruits but the recipies still call for massive amounts of white sugar. This came up with my adult offspring recenly. We were looking for an innovative savory recipie. Nothing was found. Honey can be used for sweetner but that's high calorie too. One daughter makes simple syrup with it and it's great in some cocktail she servers her friends...

Glucose is glucose and fructose. Fructose is fructose and glucose.

For the same reason that high fructose corn syrup is viewed as not necessarily the best ingredient to eat healthwise, consuming higher levels of fructose in fruit form causes the same effect. Some studies I found by search suggested that digesting higher levels of fructose is more difficult for the body than sucrose and potentially has long term adverse effects.

There is a difference relative to spiking insulin production between the two but someone without diabetes risks isn't helped by substituting fructose for glucose. Everything in moderation.

I have not devided these two huge clumps as I intended. interestingly, on either side of these two clumps, are other rhubarb plants that stay small. maybe they would benefit from some fertilizer.

In my childhood people would ”dress” rhubarb plants with aged? manure. in the past, I would give my rhubarb plants a bit of eithet 8-8-8 or something like Gardentone by Epsoma.

Judi, we ate it raw unwashed from the garden dipped in sugar too. My sis and I would sneak the sugar bowl out to where the clump was growing. I don't know why we felt the need to be sneaky other than that made it more fun, back then no one particularly cared what we snacked on or tried to limit our sugar. Decades later we still have all our teeth and no weight issues.

Cooler summers here on the Washington coast but we can cut and enjoy rhubarb into early Fall.

He recently switched from eating a lot of candy to fruit. He has a line about soon as you introduce him to a fatty who only eats fruit he'll worry about it! I have been wondering about the "high fructose corn syrup" vs just corn syrup. I look for the "NO high fructose corn syrup" on labels and now have discovered you will find 'corn syrup" or straight up sugar as an ingredient second or third on the list.
