Comments (28)Can't help with the original post, other than to say if you use spice cake you may not need any additional spices, or maybe just 1/2 to 1 t. of pumpkin pie spice mix for a true "pumpkin spice" flavor. I will also contribute a really great recipe. If you can't decide between pecan pie or pumpkin pie, this bar recipe is the best of both worlds. -Grainlady PUMPKIN PIE SQUARES Base: 1 c. all-purpose or whole wheat flour (your choice) 1/2 c. brown sugar (can reduce it to 1/4 c. if you'd like) 1/2 c. butter (softened) Mix until crumbly and press into a 13x9x2" baking pan. Bake 15 minutes at 350°F. In a large bowl (or blender) combine: 1 (15-oz.) can pumpkin (puree) 1/2 c. brown sugar 1 can (13.5 oz.) evaporated milk 2 eggs 1 t. cinnamon 1/2 t. ginger 1/4 t. cloves Beat well and pour mixture over baked crust. Bake 20 minutes at 350°F. Topping: In a small bowl combine 3/4 to 1 cup chopped pecans 1/2 c. brown sugar 2 T. butter Sprinkle over pumpkin filling and bake 15-20 minutes more. Cool in pan on rack. Cut into 2" squares. Yield: 2 dozen. Grainlady notes: You can use 2 t. pumpkin pie spice mix for the cinnamon, ginger, and cloves. I use coconut palm sugar instead of brown sugar (which lowers the glycemic impact). Comments (12)My hand towels have fringe. I was concerned that the fringe would look very bad over time. The towels are relatively new so I don't know. But I don't find the fringe to be a problem. Fringe is made from the ends of the warp (vertical) threads used during weaving. They are part of the peshtemal style. Expect a non-fringed towel could be found. She has some free downloadables including a recipe for GF English Muffin Bread. I have made many of her recipes including the dreaded Green Bean Casserole. I have made bread from her book but I have moved on. Sourcing issues. I like other types of recipes she develops. http://glutenfreeonashoestring.com Elanas Pantry. Full of really healthy and GF options. https://elanaspantry.com No Gluten NO problem, full of good interesting recipes. I have made bread from this group. Wonderful pie crust and pumpkin pie recipe, too. http://nogluten-noproblem.com America's Test Kitchen: How can it be gluten free cookbook. Made many breads from this book. They have english muffins too. They take the time to educate on why a particular ingredient works or doesn't. This can help you learn to convert a traditional recipe into something you can eat and enjoy. The ( or a or some) trick(s) to successful GF baking is or are: 1. sourcing some of the ingredients. Baked goods needs structure and without gluten for structure, you will need other things that act accordingly. Not all of these ingredients are at the grocery. I have found some at a big health food grocery or Amazon. Honeyville Grain is where I buy my almond flour. I keep it in the freezer with a 1/2 gallon mason jar in the Fridge for immediate use. Time. Same ingredients will benefit from a rest period to incorporate the liquid into the dry so you don't get a dried out loaf of tasteless cardboard. 3. Patience and sense of adventure. Changing our diets can be challenging at best and very discouraging at worst. I did it to improve my health which far exceeded any expectations I ever had. This is backed up by blood tests plus pleasant surprise by medical professionals. If you really don't want to get into all this because it can get expensive to get the right equipment and ingredients then Trader Joe's bread is totally acceptable. It has a decent mouth feel, doesn't fall apart and is affordable. I buy several and keep them in the freezer for sandwiches. I used to use Udi's for emergencies but it can be rather dry and does fall apart. So no more of that. I also like Food for Life Brown Rice Tortillas. I use them to make a flatbread to go with soup or a quick pizza. Hope all the GF'ers have a great day....See Morechloebud
