Another “possibly not for everyone” salad

I’m not really a garden salad fan, and whenever we have a family pot luck lunch it usually only has gaden salad type offerings as the rest of the family does like them. Fair enough, but I often wish there was something I would like besides potato salad.

For various reasons I’ve had to increase my vegetable intake recently, and while scrolling through a recipe list I susbscribe to’s latest ”50 great salads” offering, I found a few to try. One was a broccoli salad, which I really enjoyed both warm and cold, so I decided this past weekend to take some to our family potluck lunch so at least I’d have something I liked even if no one else did.

To my surprise, they ate it all!

It was very easy and quick to make, too.


Break up a couple of large heads of broccoli into florets and steam until just tender.

Fry 4oz of bacon and chop into small pieces.

The recipe had thinly sliced rings of two spring onions but I prefer them cooked so I cooked them with the bacon.

Mix all together.

Make a dressing of 1/4 cup of mayonnaise and two tablespoons of seeded mustard and use to dress the salad (you may not need all of it).

The recipe also had halved grapes in there but that just seemed too weird plus grapes are pretty expensive atm.


Best part was DH really really loved it and would like to have it again!
