Can we talk about binders and fillers?

Last week, I made crab cakes from scratch for the first time. A friend in Maryland sent me her recipe. The recipe called for 2 crustless slices of white bread made into crumbs and 1 egg. I thought the egg was a binder and the bread was filler, so I only did one slice of bread. Instead of sauteeing the crab cakes, I baked them hoping they would hold together better. I got 5 cakes out of pound of lump crab meat, 3 held together, albeit loosely, and 2 were, shall we say, deconstructed.

Were the deconstructed ones, the result of only including one piece of bread?
