New Build - Kitchen Hood Construction Help?

We are working on a rebuild. I’m working on kitchen cabinetry and hood design. Originally, I was going to do a plaster hood - but as I’m splurging on kitchen cabinets (inset, shaker front doors and slab front drawers), I want to go max bang for buck on hood. Plus, I don’t want anything ornate.

Range wall will have wall ovens and cabinets on left, 36” induction range in middle and I’ve selected a hood insert. Then on right, will be a counter to ceiling cabinet. Counters will be soapstone with ~12” backsplash and ledge. Then 3x12” zellige tile to ceiling.

Hood construction - plaster vs. wood? Where can I save $? What is easier to clean (because…. dust and grease)? I want a rectilinear design to keep things simple, but not sure about the expense and folks’ experience with the finished product. Would love to hear all thoughts and recommendations. Thanks!
