Why are these directions like this?

Directions for cooking farro, at least those on the Bob's Red Mill package, direct you to cook farro in much more water than necessary and then drain the excess? Why? Don't we lose nutrients? We don't do that with rice, white or brown.

I always add much less water than called for and cook until it is absorbed, like rice. Why wouldn't you?
