New house - no gas -Turkey Fryer Canning?
Comments (17)My wife and I can, both BWB and pressure with a high BTU outdoor burner. The one we have is great for BWB -- it brings the large kettle to boil VERY quickly and adjusts low enough for that purpose... But there are better choices for pressure canning, chiefly one of those three burner individual valve jobs. For pressure canning, the problem is that instead of raw heat output, you need very fine adjustment which turkey fryers and large BTU burners won't give you. Also as mentioned, you need a good wind sheild and prep area, and too, the house kitichen nearby...Those requirements aside, outdoor canning is just a terrific way to keep the kitchen freer and if doing fish, as Carol said, keeps the mess and smell outside. Highly recommended....See MoreWhat temperature do you cook your turkey to?
Comments (15)"dcarch, would you please share more info re the J. Pippin method. Do you put the whole frozen bird into an oven set at 145? For how long do you cook the bird? I am very interested, because I cook most meat/poultry pieces in a frozen state. Have never cooked a whole chicken or turkey in the frozen state, but am most interested in doing so. Just need more information. Thanks." Jacques Pépin’s (Spellcheck keeps on changing to Pippin ) method is to cut up the turkey, similar to what’s known as spatchcock method. Basically cutting up the turkey in sections to cook, making it easier not to overcook the bird. Safety in cooking is very important. Every year around Thanksgiving and Christmas many people get sick from eating improperly prepared turkey, from thawing to cooking. Many refrigerators are not cold enough to thaw a frozen turkey for a few days, and not using a thermometer is highly questionable. My method requires the use of sous vide cooking equipment, which can heat up food much faster using moving hot water at a precisely digitally controlled temperature. Temperature for cooking using sous vide electronics can be accurate to less than one degrees. This allows the turkey to be thawed and cooked much faster and cooked to known safe temperature inside and out. You cannot try to cook at a low temperature because oven hot air cannot conduct heat as fast as hot circulating water, and oven temperature can be off by as much as 40 degrees. dcarch Guaranteed perfect results for every part of the turkey...See MoreDo you have a air fryer?
Comments (25)Air "frying" is not necessarily healthier than deep frying if you are using frozen pre-battered "oven ready" products. Many of these products have a lot of fat in them and the coatings to promote crispness and browning. More than would be absorbed by properly deep frying the same item in its non "oven ready" form at the correct frying temperature. The only way to achieve fried foods is to either have the fats outside the food or in the food. Anything else is convention roasting or baking....See MoreDo you have an air fryer?
Comments (22)My adult kids have encouraged me to get one, but like so many here, we don’t fry foods. And, it’s just the two of us now, so I’m not cooking big batches of anything. As I’ve mentioned recently, DH and I are also heading towards vegetarianism. And, we don't eat bread, potatoes, wheat flour anything, or white rice. I also don’t want more kitchen clutter! We spent Super Bowl Sunday with friends and she had received one for Christmas. She wasn’t sure she liked it all that much, although we did put in some of the already cooked Buffalo Wings we‘d picked up on the way there. They were already crisp, so I‘m not sure what it did other than warm them. To me, it looked like a giant black and tan plastic egg on her counter. That’s something I would NOT like to look at every day, all day long! I have a double wall oven with convection option and I use convection a lot. I also have a good microwave. So, especially after seeing my friend’s new air fryer/giant egg, I’m definitely leaning away from getting one myself....See Morecolleenoz
