Connecting a 120V receptacle to a 240A breaker and disconnect

I had a breaker box installed for my hot tub, and today ran a second breaker from it to my greenhouse. I ran 6/2 UF wire for a little over 50' from a 40A breaker to a 60A disconnect.

The heater I'm putting in has a 31.3A draw:

I'd like to add a 120V receptacle for a 6A fan. I currently have a 100' extension cord ran to the greenhouse, but since I'm already knee deep in the wiring it would be a lot better if I could just install one permanently.

Here are my questions:

1. Is it OK to do this? I'm concerned that one leg of the 240V would have a greater load, and I don't know if an imbalance is an issue.

2. The 240V wire has a black, white, and bare ground. Measuring from black to white gives me 246V, and measuring from either the black or white to the ground gives me 123V. Do I just run one of those black or white wires to the hot of the receptacle, then use the ground as a neutral?
