Small batch of sweet dough

I am new to yeast baking. I learned last year after decades of craving the breakfast buns from the N.Y. bakeries where I grew up. I've been using the same sweet dough recipe with success but now I'd like to make a smaller batch of dough. I know you can cut yeast recipes in half. The original recipe calls for one egg to 500 grams of flour, so would I use half an egg or just remove some of the white?


I found a smaller recipe that a baker uses for all her sweet dough bakes, including cinnamon buns. It's a brioche recipe but I'm concerned it may be too rich for NY crumb buns, where half the height of the bun is cinnamon streusel crumbs. It also has the same amount of sugar and butter as my recipe that uses 500 grams of flour--and an additional 10 grams of butter!

  • 290g all-purpose flour
  • 30g granulated sugar
  • 1 tsp (3.1g) instant yeast
  • ½ tsp (2g) salt
  • 120g whole milk
  • 1 tsp vanilla
  • 1 large egg (60g), lightly whisked
  • 60g unsalted butter, at room temperature
