Raspberry Hot pepper jelly?

Hi! I have a lot of black raspberries frozen from this summer. I was wanting to make a raspberry hot pepper jelly - similar to the traditional hot pepper jelly (Hot peppers, certo, vinegar, and sugar). I have been unsucessful in finding a recipe. I'd also consider a hot pepper raspberry jam. I have found a few recipes, but all seem "iffy" at best. Most have 1-2 jalapenos added to a raspberry jam recipe. This one looks like it might be similar to what I want, but the amount of peppers vs lemon juice are troubling me. http://recipeofhealth.com/recipe/raspberry-habanero-jam-beware-hot-stuff-509120rb

So does anyone have a recipe to share? Or have you made fruit pepper jellies or jams in the past? Thanks for any insight. :)

On a separate note, I was also kind of wanting to make the chocolate raspberry jam in the Ball book. Anyone try this? How did you like it?

A chocolate and black raspberry jam sounds wonderful, but I’ve never tried it.

Re the recipe you linked, the 2 tbs lemon juice seems normal. One cup of minced habanero peppers would make it HOT!

Re your original idea of black raspberry and jalapeno, it just doesn’t jump out as a natural combination for me. I’d make a single jar to try it first.

If you are looking for a flavor combo for the black raspberries, I’d try apple. I made an apple and jalapeno jelly last year that was excellent…. I used the apple so that I didn’t need to add pectin.

Yes you can sub peppers for peppers as long as the total measured amounts are kept the same. Flavor is bound to be altered since banana peppers have more heat in them than bells. Whether that flavor change is acceptable only you can decide. Scoville rating for bells is zero but the rating for banana peppers ranges from 100-900. Dave

Lisa, Habanero Gold sounded too hot for me too........ Just substitute the same amount of a pepper you like. I called my first batch Anaheim Amber. Very mild. This year I made Jalapeno Heaven. I'll let ya know after tonight.........it's on my dinner/snack menu!! :+) Deanna

I love Katiec's cheesecake, as does all of my family. The thumbprints are actually a Rick Rodgers recipe, given to me by Readinglady. I use my homemade habanero gold in place of the jalapeno jelly. I did find it easier to use a spoon to fill the indentations in the cookies/crackers instead of trying to squeeze the stuff out of a bag. Savory Cheddar and Jalapeno Jelly Cookies from Rick Rodgers Makes about 4 1/2 dozen 8 ounces extra-sharp Cheddar cheese, shredded (about 2 1/2 cups) 6 tablespoons (3/4 stick) unsalted butter, softened 1 cup all-purpose flour 1/3 cup jalapeno jelly, or sub apple butter or chutney Place cheese and butter in a food processor (could be creamed by hand or mixer); add flour and process until the mixture forms a soft dough. Gather up the dough and divide into two flat disks. Wrap in wax paper and freeze until chilled, about 45 minutes. Position two racks in the center and top third of the oven and preheat to 400F. Line two baking sheets with parchment or use nonstick sheets. Using 1 teaspoon dough for each, roll the dough into small balls and place 1 inch apart on the sheets. Bake 5 minutes. Remove from the oven. Using the handle of a wooden spoon or 1/2-inch-thick dowel, poke an indentation in each cookie. Place the jelly in a small plastic bag and force it down into one corner. Snip off the corner of the bag to make a small hole. Pipe the jelly into the indentations. Return to the oven and bake, switching the positions of the sheets from top to bottom halfway through baking, until the tops are very lightly browned, about 10 minutes. (Cookies will continue to crisp as they cool.) Transfer to racks and cool completely. Can be baked up to two days ahead. Store at room temperature in an airtight container and separate layers with wax paper. Annie

An actual recipe? Not that I know of. It is an unusual combo. But you can use the Mayhaw (or any fruit)-Hot Pepper jelly recipe from NCHFP by just subbing apple juice for the mayhaw juice and adding some fresh mint for one of the peppers called for. http://nchfp.uga.edu/how/can_07/mayhaw_pepper_jelly.html The combo doesn't appeal to me personally but if I was going to make it I'd sub 1/4 c diced mint for one of the two 1/4 cup peppers called for. You're right to question the acidity of the recipe you posted. Here is a tested recipe that you can sub your raspberries for the peaches.... Peach Jalapeno Jam - Kansas State University Recipe

3 cups crushed peaches

(about 2 lbs, or 4 large peaches)

1/2 cup jalapeno peppers, finely chopped (about 1/4 pound, or 4-5 peppers)

1 cup water

3/4 cup cider vinegar

3/4 cup lemon juice

1 – 1 3/4 oz. package powdered pectin

4 cups sugar

Wash, pit, and crush peaches. Wash peppers, remove stems and seeds, and chop finely. Combine peaches, peppers, water, vinegar, and lemon juice in a 5-6 quart pot. Bring to a boil, then reduce heat and simmer 20 minutes, stirring often to prevent scorching.

Add pectin to the peach/pepper mixture. Bring to a boil over high heat, stirring constantly. Add sugar, stirring well to dissolve completely. Bring to a full rolling boil, stirring constantly. Boil hard for 2 minutes. Remove from heat and skim foam, if needed.

Ladle into sterile, hot, half-pint jars, leaving 1/4-inch headspace. Wipe jar rims with a dampened clean paper towel. Adjust two-piece lids. Process in a boiling water bath for 10 minutes at 1000-6000 feet above sea level. Yield: 4-5 half-pint jars.

I did make the chocolate raspberry jam and it was good, but never set up. It made great sauce, though, for cheesecake and ice cream.

I found a couple of recipes out on the internet, but I haven't tried to make any hot pepper jelly other than Habanero Gold.
