I can't believe I've never roasted a chicken!

I may have tried it many years ago, but these days, with the price of everything...........!

Bought a 4.5 lb chicken, gave it a rub with butter and herbs.

Put my crueset in the oven, set the oven for 450*. When it got up to heat, popped the chicken in. Cooked for 35 minutes. Turned the oven off for another 35 minutes. Let it rest while I made a pan sauce and cooked asparagus (oh, put some taters in when the chicken went in!)

Oh YUM! Nothing like the supermarket dried out roasted chicken!

We have chicken for the week plus stuff for soup!
