Barbara, I've done a lot of bread searches, and found some interesting archives, lots of recipes of people's own childhood breads, but no clues about yours. What concerns me is the "My". The following words could actually say something like "Molly Jones shares her mother's famous egg bread." Otherwise, to me it seems more logical that it was your mother who said it, maybe even wrote it in the book. But it could be either way. My BH&G is newer than your mom's, but still old. There's one recipe called Egg Bread: 6.5-7.5 c. AP flour 2 packets ADY (equals 2 cakes fresh yeast, equals 4.5 tsp ADY) 2 c. milk 1/4 c. sugar 1/4 c. butter or margarine [N.B.--it does matter which for the texture, but either will make good bread.] 2 tsp. salt 3 eggs Two loaves, double rise, 375° F. 35-40 min., cover with foil last 15 minutes so it doesn't over brown. This is a very standard enriched bread. If you want a picture of the recipe with full directions let me know.

I had heard about the NY Times bread recipe when it came out a few years ago, so googled it and found the following: Recipe: No-Knead Bread 3 cups all-purpose or bread flour, more for dusting teaspoon instant yeast 1¼ teaspoons salt Cornmeal or wheat bran as needed. 1. In a large bowl combine flour, yeast and salt. Add 1 5/8 cups water, and stir until blended; dough will be shaggy and sticky. Cover bowl with plastic wrap. Let dough rest at least 12 hours, preferably about 18, at warm room temperature, about 70 degrees. 2. Dough is ready when its surface is dotted with bubbles. Lightly flour a work surface and place dough on it; sprinkle it with a little more flour and fold it over on itself once or twice. Cover loosely with plastic wrap and let rest about 15 minutes. 3. Using just enough flour to keep dough from sticking to work surface or to your fingers, gently and quickly shape dough into a ball. Generously coat a cotton towel (not terry cloth) with flour, wheat bran or cornmeal; put dough seam side down on towel and dust with more flour, bran or cornmeal. Cover with another cotton towel and let rise for about 2 hours. When it is ready, dough will be more than double in size and will not readily spring back when poked with a finger. 4. At least a half-hour before dough is ready, heat oven to 450 degrees. Put a 6- to 8-quart heavy covered pot (cast iron, enamel, Pyrex or ceramic) in oven as it heats. When dough is ready, carefully remove pot from oven. Slide your hand under towel and turn dough over into pot, seam side up; it may look like a mess, but that is O.K. Shake pan once or twice if dough is unevenly distributed; it will straighten out as it bakes. Cover with lid and bake 30 minutes, then remove lid and bake another 15 to 30 minutes, until loaf is beautifully browned. Cool on a rack. Yield: One 1½-pound loaf. Friday Night, 7:00 PM: Mixed together bread flour, yeast (Fleischman's rapid rise), salt and water in a non-reactive bowl, covered with plastic wrap and placed the whole kit n' kaboodle in the oven, leaving it there overnight and through the next morning. Saturday Afternoon, 1:30 PM: Heavily dusted my work surface with flour, poured the dough onto the surface, heavily dusted the top of the dough with flour, and following Alton Brown's instructions for "punching down" dough, performed the wallet folding pattern three times. I let that rest covered with plastic wrap for fifteen minutes. Saturday Afternoon, 1:46PM: I rolled the dough into a "ball", and placed it on a sheet of heavily dusted parchment paper instead of a towel, and let it rise for 2 hours. *Note: the dough didn't really hold a ball shape, but rather looked more like an in-the-dough reincarnation of Jabba-the-Hut. Translated: it was little more than an amorphous blob, which I covered with a towel, nevertheless. I set the timer for two hours, over the course of which the dough spread moreso than rose. Saturday Afternoon, 3:16 PM: I placed my 5.5 qt. Le Creuset enamel coated cast iron Dutch Oven in the oven and preheated both to 450-degrees. Saturday Afternoon, 3:46 PM: When the timer went off signaling the expiration of the two hours, I carefully removed the very hot Dutch Oven and placed it on the counter. I dumped the dough blob from the parchment paper into the Dutch Oven and wearing oven mitts, covered the pot with aluminum foil, since the metal replacement knob that I ordered to replace the plastic one that came on the dutch oven lid -- and is only rated to 375 degrees -- had not yet arrived in the mail. My preference here would have been to use the lid that came with the pot. I baked the bread, covered (with foil) for 30 minutes, removed the foil and baked for anther 20. I then removed the pot from the oven and dumped the bread onto a wire rack where I let it cool for one hour before slicing. The bread turned out great, very crusty, very artisan. I will definitely make it again. The main thing is to remember to start it the night before, else there will not be enough time to develop the glutens and more complex flavors as fully as necessary to make for a great loaf of bread and still get the bread baked at a decent hour. Lars - You open the lid of the bread machine after it's been going for about 5 minutes and check the condition of the dough by looking at it or touching it, and adjust the hydration accordingly, if necessary. What you want is a nice soft, sticky, well-formed ball. Just as in traditional dough making, it's still about the "feel" of the dough. Ingredient measurements in bread recipes are always just a good guess because protein count in wheat/flour and the moisture the flour has absorbed during storage all affect the dough. Flour is usually very dry during the dry winter months, and contains more moisture during humid weather and amount needed often changes because of that. A hard dry dough will end up a bread "brick", so it's necessary to add liquid. If the dough is crumbly and not formed in a ball, add more water. If the dough is loose, sticking to the sides or bottom of the pan, add a bit more flour. From years of experience, I know if I add dry multi-grain cereal or oatmeal at the add-in beep (towards the end of the kneading cycle), it's best to have a dough ball that is a little slack because the dry ingredients will absorb the additional hydration during fermentation. I want a slack dough if I want a holey type of artisan bread. I also want a slack dough for English Muffins to maintain that traditionally holey crumb. I also add chia gel (chia seeds + water) to all my loaves, and I always have to adjust the hydration because of this addition. I also use a liquid sweetener instead of sugar (agave nectar) and it's possible to need a little flour because of the additional liquid from the agave nectar. Hydration requirements changes because of the protein level of the flour, and that will vary with each bag of wheat I purchase, or bag of flour. I recently purchased some hard white winter wheat that is 13.1% protein. That tells me I'll need to some liquid because the higher protein level (gluten) will absorb more hydration. It's just a machine that does the work in bread making. It still needs a human to assess the dough condition. -Grainlady

There is a distinct difference between genetically engineered crops and natural hybrids and it would be well worth the efforts of those who are insulting those who are warning people that all frankenfoods are highly dangerous. There are German studies and even Monsanto's own studies which point a great problem with genetic modified foods. To not get too technical, but it has to do with the base amino acid structure the body does not recognize. I would suggest people notice how many people have the 'new diseases' of auto immune from lupus, MG, inflamed bowel, arthritis etc.... as examples that the body is having great difficulty with these grains and oils. Ask your vet or pet food dealer how many 'allergic' pets are showing up now to food. It is because of the hybrid corn some animals can not deal with it. Just because you eat something and you don't end up in the emergency ward does not mean that it is not going to affect your body sooner than later. Studies now indicate diabetes is from an inflamed pancreas. Once again not inflamation is the key disease and it links back to all of these genetically modified crops. For goodness sake people, I deal in agriculture and genetics. There are crops like Roundup corn, soybeans and canola oil where Monsanto has engineered a crop where you can spray Roundup, the same thing you put on your lawns and a herbicide which kills every plant, but it will not affect these crops. You are eating in mass now crops that a poison will not kill. Some of these genetic crops have trace genes of even animal DNA so as to make them more resiliant. That is not natural and if you ever ask the growing number of sick people they will tell you this is not funny as they are dying slow miserable deaths. My research hints that there is a symbiotic relationship between the amino acid hybrids, bacteria and a fungal infection. That is why so many skin diseases are manifesting including boils. If like in MG that a person's lining off their nerve cells is being eaten off so the nervous system shorts out to the fact if complete corn diets are feed cattle that it will burn them out and kill them, should perhaps convince the experts on here claiming all of this is nonsense. This is not about transfats. This is about a genetic engineered mutation that is being fed into the meat chain, the pets you have and you. Do a forensic test on your hair and it will not come back diverse. It will come back that you are corn due the huge amounts of it in all foods and if it is not corn, it is canola oil adding to the problem. I have watched a black lab and an irish setter dog develop arthritis, stumbling, seizures and bloody stools. When the diet was switched to a rice base or no corn, they both recovered and healed. People and their pets need to eat correctly and stop buying this stuff as once that happens, the corporations will loose money and won't push it onto consumers any more. Farmers are only using now what the market demands. Start demanding natural grains, natural beef, chicken, turkey and pork and vegetables not being fertilized in Mexico using human feces (that is where the spinach and jalepino/tomatoe problems came from is human sewage waste and not swine as people were lied to.) and please stop eating those tons of preservatives they have in everything. You don't have to be vegan as that is just as dangerous in the genetic plants they are pushing (get a clue if an insect won't eat it in the field perhaps you shouldn't eat it either.). As far as hunza, it is molasses bread and molasses is still good for you. It covers up the strong taste of buckwheat and if you ever ate millet flower you would cringe it is so bad. (Millet is very good boiled like oatmeal. It just is not a good flour as it is strong.) The link provided is a natural help site for people who are having problems and the modern 'cures' are only making them more ill. There are no side effects to good food except health.
