BH&G pink plaid cookbook - canning recipes OK?
Comments (2)What edition is it? Publishing date? The cover didn't change for more than 25 years. As a very general guideline, no, cookbooks aren't a reliable source for canning recipes. Especially when the recipes are for canning low acid foods. On the other hand BH&G is getting heavily into the canning market and have new books out that are current to the guidelines. Comments (9)I haven't seen the frozen C of S soup for years either. I first came across the canned type about five years ago in a cut rate food store that I think got them from freight damaged shipments. (These were not dented or damaged in any way but perhaps part of the case was.) I bought all they had. Then about a year ago I found them in a very large supermarket in a larger town. Now they're available in medium sized town supermarkets but not yet in my small 3,000 Pop. town. I've got my stash and replenish it whenever I get low and hit a larger town. Comments (8)I didn't know which one you wanted so I scanned them all: REMARKABLE FUDGE Butter sides of heavy 3-quart saucepan. Add 4 cups granulated sugar, one 14-1/2-ounce can (1-2/3 cups), evaporated milk, and 1 cup butter. Cook over medium heat to soft ball stage (236ú); stirring frequently. Remove from heat; add one 12-ounce package (2 cups) semisweet chocolate pieces, 1 pint marshmallow creme, 1 teaspoon vanilla, and 1 cup broken walnuts. Beat till chocolate melts, Pour into buttered 13x9x2-inch pan. Score while warm, cut when cool and firm. BLUE RIBBON FUDGE Butter sides of heavy 2-quart saucepan. In it combine 2 cups granulated sugar, one 6-ounce can evaporated milk, two l-ounce squares unsweetened chocolate, dash salt, and 1 teaspoon light corn syrup. Cook and stir over medium heat till chocolate melts and sugar dissolves. Cook to soft ball stage (236ú), Immediately remove from heat, Add 2 tablespoons butter without stirring. Cool to lukewarm (110ú). Add 1 teaspoon vanilla and beat vigorously till fudge stiffens and loses its gloss. Quickly stir in 1/2 cup chopped walnuts, Push from pan, (don't scrape sides) into buttered shallow pan. Score while warm; cut when firm. OPERA FUDGE Butter sides of a heavy 2-quart saucepan. In it combine 2 cups granulated sugar, 1/2 cup milk, 1/2 cup light cream, 1 tablespoon light corn syrup, and 1/2 teaspoon salt. Cook over medium heat, stirring constantly, till sugar dissolves and mixture boils, Cook to soft ball stage (238ú). Immediately remove from heat; cool to lukewarm ,(110ú) without stirring. Add 1 tablespoon butter and 1 teaspoon vanilla, Beat vigorously till fudge stiffens and loses its gloss. Quickly stir in 1/4 cup chopped candied cherries, Spread in buttered 9x5x3-inch pan. Comments (22)Sylviatexas, yes, I have eaten mock apple pie that a friend's mother made for an after school treat when I went home with her after school one day about 1955. I had never had it, and if I had not been told, I would have thought it was a slice of apple pie. The Ritz crackers are halved, and the only thing that gives it away is that the edges of the "apples" are scalloped or look like they have been peeled with pinking shears. That was an interesting visit. When my friend introduced me to her mother, her mom gasped and asked if I was Jack ____'s daughter. I replied that I was, and she proceeded to tell me how he was so handsome and she had had a crush on him in their single days. At dinner that night I related this mom's report of my dad. He was tickled to hear that a girl he did not remember from his past remembered him. I have seen pictures of my dad from back then, and he looked like a slender Bert Lancaster....See Morebessiedawg
